Growing up in Maryland, I can tell you that crabs, and crab soup, are particular staples of the area. And I, for one, absolutely love them. I've only had crabs once this summer, but I'm already dying to have them again.

I saw an episode of Bittemen on the food channel and he was at my favorite bay area restaurant, Fish. I recognized one of the cooks since they have an open kitchen. The next time I was there, I yelled out that he came off great on TV.

Singapore Chilli Crab
Ingredients
1 lb (450g) mud crabs or soft shelled crabs
4 tbsp plain flour if using soft shelled crabs
3 tbsp vegetable oil*
8 cloves garlic, roughly chopped
8 fresh red chilli, roughly chopped
1 egg
2 spring onions (scallions), cut into finger length
1 tsp freshly squeezed lime or lemon juice
1 small bunch coriander plant (cilantro)
*For soft-shelled crabs, oil for deep frying
Mix together for Sauce
1 cup of water, 5 tbsp tomato catsup, 1 1/2 to 3 tbsp sugar, or according to taste, 1 1/2 tsp cornflour, 1 tsp pounded brown preserved soya beans or dark miso (optional), 1/4 tsp salt
Method
Heat the oil in a wok or shallow saucepan over high heat. Add garlic and stir-fry for 1 minute. Add the chilli, stir-fry till fragrant.

I have loved Ginger Crab after trying it at Fish over the summer. With a little help from Arthur's recipe and three fresh crab, I thought I would give it a go.
Recipe-3 crabs
- 1/2 cup Ginger sliced
- 1/2 cup Garlic chopped
- 1 cup carrots sliced
- 1/4 cup green onion
- Fish sauce (to your liking)
- 1 cup stock (fish or chicken)
- Couple of lemons
- Cornstarch-to thicken
- 3 Live Crabs
- Pasta
- Cilantro for garnish
I bought live crabs, so I boiled them on each side for 5 minutes and then pre-cracked them.

Smoked Bacon Wrapped Crab
Ingredients
450g crab meat
450g smoked bacon - cut into strips
2 large jalapeno peppers,
Mozzarella or Monterey Jack cheese
1 lime
Skewers and a fresh salad for serving
Recipe
Fill a saucepan two-thirds full with water and bring to a boil. Add the smoked bacon and blanch for 3 - 4 minutes. Drain and rinse with cold water and pat dry with a paper towel
Toss the crab meat with lime juice and place strips of peppers and sticks of cheese across a strip of crab meat.

Crab Cake Benedict
2 stalk celery, finely chopped
1 med onion, finely chopped (1/3 cup)
1 egg, beaten
1/2 cup mayonnaise or salad dressing
Dash hot sauce ( optional)
1/4 teaspoon dry mustard
1/2 teaspoon garlic powder
16 oz lump crab ( ounces fresh cooked crab meat or canned crab meat, drained, flaked, and cartilage removed 1//2 cup panko bread crumbs or coarse bread crumbs
In a mixing bowl, combine all ingredients except for crab meat and bread . Gently fold in the crab meat and bread, being careful not to break the lumps. Shape into cakes.

The earliest horseshoe crab species were crawling around the Earth's shallow coastal seas for at least 100 million years before the dinosaurs even arrived (which was about 200 million years ago).

Ingredients
1 can Crab meat, rinsed
2 slices Pumpernickel Bread
4 Tbsp Mayonnaise
2 slices Avocado
1 Tbsp chopped Green Onion-
2 slices Colby or American Cheese
1 Tbsp Parsley, chopped
Directions
In a small bowl mix crab, mayonnaise, onion and parsley. Spread half the mixture evenly on each slice of pumpernickel bread, top with a slice of avocado and then cheese. Butter outsides of bread lightly and fry in pan until crispy on both sides and cheese has melted.

Ingredients
1 lb Crab Meat
1 medium Onion, chopped
6 slices whole wheat Bread
1 cup Mayonnaise
2 Tbsp Mustard
1 can (5oz) Evaporated Milk
salt and Pepper, to taste
1/3 stick Margarine
Break wheat bread into small pieces. Combine all ingredients, except margarine, in a large bowl and stir until well blended. Do this a couple of hours before cooking to enhance flavor.

Yesterday since it was such a lovely day. I decided to head over to Fish with my boyfriend to a super delicious restaurant in Sausalito for my absolute favorite.....Ginger Crab. All it is fresh crab, lots of ginger, carrots and some noodles but it is divine.
