FDA Takes Action against Cream Cheese Companies, Executives
Repeated federal violations and failure to correct drove action
The U.S. Food and Drug Administration today announced the shut down of cream cheese and seafood operations at Lifeway Foods, Inc. and its subsidiary, LFI Enterprises, Inc., both Illinois companies, until they are found compliant with food-safety laws.

Gingerbread Cupcakes with Cream Cheese Frosting
INGREDIENTS
5 tablespoons unsalted butter, softened
1/2 cup white sugar
1/2 cup unsulfured molasses
1 egg
1 egg yolk
1 1/4 cups all-purpose flour
1 tablespoon Dutch process cocoa powder
1 1/4 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon baking soda
1/2 cup hot milk
2 tablespoons unsalted butter, softened
2 ounces cream cheese, softened
2/3 cup sifted confectioners' sugar
1/4 teaspoon lemon extract
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Butter or line with paper liners a 12-cup muffin tin.

My travels have inspired me many recipes and this spread is one of them. It resembles the shrimp salads you can find in Norway, although a bit thicker, and it's delicious with Swedish crackers as an appetizer or on a bagel for lunch. It's also just as delicious with smoked salmon or crab meat instead of shrimps.

Recipe
Carrot Cupcakes with Cream Cheese Frosting
3/4 cup whole-wheat pastry flour
1/2 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup canola oil
3/4 cup firmly packed light brown sugar
2 large eggs
1/2 cup natural applesauce
1/2 teaspoon vanilla
1 1/2 cups finely shredded carrots (about 2 medium carrots)
1/4 cup plus 2 tablespoons finely chopped walnuts
4 ounces 1/3 fat cream cheese (recommended: Neufchatel)
3/4 cup confectioners' sugar, sifted
1/2 teaspoon finely grated lemon zest
Preheat the oven to 350 degrees F. Line 12 muffin cups with paper liners.
Sift together the first 6 ingredients.

I baked this cake, as well as a red velvet cake with white chocolate and chocolate buttercream frosting for a friend's birthday... unfortunately I got to taste neither of them, although I heard they were quite tasty (I got a MONETARY offer to bake the red velvet for another party... of course I wouldn't charge for it!)
SO, we start out with these ingredients:
1/2 cup butter, room temp
1 1/4 cup brown sugar splenda/ brown sugar
2 eggs
1 cup pumpkin pie filling
1 teaspoon vanilla extract
2 cups cake flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup buttermilk
(Preheat to 350) As for most recipes, you just mix the flour together with the other dry ingredients, excluding the brown sugar.

2 lb. cream cheese, soften
1 c. crushed pineapple, well drained OR1/2 jar of diced cherries, well drained
2 loaves rye bread (I prefer thin, white bread for these though)
Cream the cheese soft.

Serves: 1
Prep Time: 15 minutes
Cook Time: 10 minutes
Ingredients:
Cooking Spray
1 cup Veggies (pick any combo: broccoli, mushrooms, tomatoes, peppers, spinach, and fresh herbs)
2 eggs, medium
2 tbsp water
Sea salt & ground black pepper
1 tbsp. lowfat cream cheese
1/2 grapefruit
Step 1:
Lightly spray a non-stick saute pan with cooking spray.

3 cups grated carrots
2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
1 1/4 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple with juice
3/4 cup chopped pecans
3 1/2 cups confectioners' sugar
1 (8 ounce) package Neufchatel cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon.
