Gingerbread Cupcakes with Cream Cheese Frosting
INGREDIENTS
5 tablespoons unsalted butter, softened
1/2 cup white sugar
1/2 cup unsulfured molasses
1 egg
1 egg yolk
1 1/4 cups all-purpose flour
1 tablespoon Dutch process cocoa powder
1 1/4 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon baking soda
1/2 cup hot milk
2 tablespoons unsalted butter, softened
2 ounces cream cheese, softened
2/3 cup sifted confectioners' sugar
1/4 teaspoon lemon extract
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Butter or line with paper liners a 12-cup muffin tin.

INGREDIENTS
3 cups grated carrots
2 cups all-purpose flour
2 cups white sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
1 1/4 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple with juice
3/4 cup chopped pecans
3 1/2 cups confectioners' sugar
1 (8 ounce) package Neufchatel cheese
1/2 cup butter, softened
1 1/4 teaspoons vanilla extract
1 cup chopped pecans
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine grated carrots, flour, white sugar, baking soda, baking powder, salt and cinnamon.

Peep Cupcakes
Original recipe inspired by a photograph in the April 2009 issue of Country Living magazine.
Makes 24 cupcakes.
Ingredients
1 Box Pillsbury Golden Butter Recipe Premium Cake Mix
3 - 10 ct packages Marshmallow Chick Peeps
2 - 8 oz boxes Cream Cheese – room temperature
1 - 7 oz bag Sweetened Flake Coconut
1 stick unsalted Butter – room temperature
2 cups Confectioners Sugar
1 Tbsp Vanilla Extract
Cupcakes
Follow the directions on the back of cake mix box to make 24 cupcakes.

I love cupcakes and I try to make them on the first opportunity I get. Here's a couple of batches I made: Chocolate cupcakes with banana cream cheese frosting and Blue Blueberry 'n' Creme cupcakes.

I baked this cake, as well as a red velvet cake with white chocolate and chocolate buttercream frosting for a friend's birthday... unfortunately I got to taste neither of them, although I heard they were quite tasty (I got a MONETARY offer to bake the red velvet for another party... of course I wouldn't charge for it!)
SO, we start out with these ingredients:
1/2 cup butter, room temp
1 1/4 cup brown sugar splenda/ brown sugar
2 eggs
1 cup pumpkin pie filling
1 teaspoon vanilla extract
2 cups cake flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup buttermilk
(Preheat to 350) As for most recipes, you just mix the flour together with the other dry ingredients, excluding the brown sugar.

Cake
2 pounds tan-skinned sweet potatoes (about 3 medium)
3 cups cake flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 cup vegetable oil
1 cup sugar
1 cup (packed) golden brown sugar
4 large eggs
2/3 cup plus 1/4 cup chopped walnuts, toasted
2/3 cup plus 1/4 cup dried cranberries
Frosting
1 8-ounce package cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
31/4 cups powdered sugar, sifted
2 tablespoons frozen orange juice concentrate, thawed
1/2 teaspoon vanilla extract
1/4 cup sliced candied orange peel
3 tablespoons sugar
For cake:
Preheat oven to 400°F. Pierce potatoes with fork; place on small baking sheet. Roast potatoes until soft, about 1 hour.

Whether as a healthy snack, or as a quick breakfast or dessert, these cupcakes are not your average cupcakes. They are actually very healthy for you and soo delicious and satisfying! I always store them in an airtight container and then put them in the fridge for whenever I get hungry!

Every weekend I have this little obsession of browsing through the recipes of Bon Appetit, Gourmet, Martha Stewart & Sunset magazines in search for a little inspiration or a recipe that is unique and fun. This Sunday I had a hankering for something Fall, Halloween themed and Sassy. Something that I could easily ship to work to feed my coworkers and something that I could add a personal twist too.
