This is the time of year when I dust off the 'ol crockpot and let it do all the cooking! This came from the fine folks at: http://southernfood.about.com/od/crockpotchicken/r/bl76c2.htm. It says it takes 7-8hrs on medium, but for me it turned out perfect in about 6 hours.

I'm intrigued by this recipe. Something about this particular mix of ingredients I have a feeling will either be utterly delicious or I'll be throwing it in the trash after the first bite. But I wanted to post it and see what you all think - and if there are any reviews, I want to hear them!

INGREDIENTS:
3 to 4 pounds boneless pork loin roast, trimmed
2 garlic cloves, minced
2 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon oregano
1 can green chile peppers, chopped
2 teaspoons salt, or to taste
2 cans (15 ounces each) pinto beans, rinsed and drained
.
Topping:
Grated cheese
Chopped onions
Tomatoes
Lettuce
Sour cream
Coarsely crushed tortilla chips
PREPARATION:
Place first 7 ingredients in slow cooker, along with 1/2 cup water. Cook 8 to 10 hours.

I don't have a pic but this is AMAZING stuff! I think of it as a stew/chili combo
Ingredients:
8 bacon strips, diced
2 1/2lbs of stewing beef (cubed)
2 28 oz can stewed tomatoes
14 1/2oz crushed tomatoes
2 8oz cans of tomato sauce
16oz can kidney beans
16oz can of black beans
16oz can of white kidney beans
16oz can of romano beans (I think they are called Great Northern in the USA)
2 cups sliced carrots
1 medium onion, diced
1 garlic clove, minced
1/2 cup green pepper, diced (I omit)
1/4 fresh parsley, minced
2 tbsp. chili powder (more if u like it to be hotter)
1 tsp.

Winter is right around the corner and the temperatures are definitely starting to drop where I live. My husband is thrilled and I have to admit that I like the chill in the air, if for no other reason that because it's not ridiculously hot and humid outside anymore.
But, winter means time for winter dishes made in the crockpot - and to me, that's beef stew.

My mother usually prepares some sort of potato dish for Christmas Day and while I love her sweet potatoes, I have a feeling that this dish could prove to be a hit too. And less work for her - just throw it in the crockpot and enjoy the day!
This could be a great side dish and a new way to serve your sweet pototoes.
