Eating a curry once or twice a week could help prevent the onset of Alzheimer's disease and dementia, a US researcher suggests. The key ingredient is curcumin, a component of the spice turmeric. Curcumin appears to prevent the spread of amyloid protein plaques - thought to cause dementia - in the brain.

I promised Kastarte2 that I would post some curry recipes, so here is one of my favorites. It is from a restaurant here in Seattle called Cafe Flora (hubby bought me their cookbook for Mother's Day last year!). I usually eat here once every few weeks!

COCONUT SHRIMP WITH RED CURRY SAUCE
Recipe courtesy of Tyler Florence, Food Network
Peanut or vegetable oil, for frying
1/4 cup cornstarch
3 large egg whites
Kosher salt and freshly ground black pepper
2 cups flaked coconut
1 1/2 pounds jumbo shrimp, peeled with tails on
Red Curry Sauce, recipe follows
1 green onion, white and green part, chopped
1 handful fresh mint, hand-torn
Fried rice, for serving
Steamed broccoli, for serving
Heat 3 inches of oil in a large deep skillet or heavy pot to 325 degrees F.
In a small bowl, mix the cornstarch, egg whites, salt, and pepper until foamy. Spread the coconut out in a pie dish.

Just made a fantastic eggplant curry, so I thought I would pass along the recipe... very easy to make!
1 1/2 cups jasmine rice, cooked to directions on package
1 large, firm eggplant, cut into 1-inch cubes
1 large, yellow skinned onion, peeled and chopped
1 large red bell pepper, seeded and diced
4 cloves garlic, cracked
1 (14-ounce) can diced tomatoes, drained
1/4 cup (a couple of heaping tablespoons) mango chutney
2 tablespoons curry powder
1 cup vegetable broth
optional: coconut, toasted almonds, chicken breast
Prepare rice.

Sri Lankan Pineapple Curry

Ingredients:
1 can (19 oz) pineapple tit-bits (drained: keep the drained juice separately) or 1 small pineapple cut into bite size pieces
1 small onion sliced
1-2 hot green peppers sliced
1 tsp. Maldive fish pieces

This comes from The Rosedale Diet cookbook and is spectacular! You can serve it over steamed spinach or rice.

3 Tbs ghee (clarified butter) (I used Smart Balance Buttery Spread)
2 boneless, skinless chicken breasts
2 Tbs curry powder
3 garlic cloves
1 can low-fat coconut milk
2 bunches spinach, well washed
Stevia (Splenda) to taste--I didn't use this, so I'm not sure what it would taste like!

I'm trying to eat more healthy and incorporate tofu into my meals. Lately I have been trying to use more coconut in my meals as well, even though it's not necessarily the most healthy item to include. And being the "bad" person I am, I feel that since I am using tofu I should be able to use coconut and even it out.

These days all I've been having for dinner is a nice bowl of steaming soup!
I live down in the south hemisphere of the globe, so I am suffering with winter. :(

From the NY Times food section a couple of years ago, I found this on wednesdaychef.typepad.com I've made this tofu dish a couple of times now and it's delicious! I like to double the sauce recipe so there's more to serve over rice and veggies...it's yummy :-)
Pan-Glazed Tofu with Thai Red Curry Sauce
Serves 2 to 4
1 one-pound package firm or extra-firm tofu
1/4 cup coconut milk
1/4 cup chicken stock
1 tablespoon fish sauce
1 tablespoon lime juice
1 teaspoon Thai red curry paste
1 teaspoon sugar
1 tablespoon peanut oil
Minced cilantro for garnish
1. Cut tofu widthwise into eight 1/2-inch-thick slices.
