Does anyone have a really good recipe using edamame? I had never tried it until about two nights ago. My SIL has been telling me about how healthy it is, and how it's a complete protein, so I got some, but I don't know the best way to serve it.

Snacking doesn't have to involve a lot of cooking. Just take my favorite afternoon snack, edamame beans.

1/2 pound edamame beans
7 cups water
1 tbsp sea salt
PREPARATION:
Boil water in a large pan. Wash edamame beans well. Add edamame beans in boiling water and boil for 5-10min.

HummusThis is soo delicious! I make it and prepare them in individual containers to bring to work. I like to make big batches of my pita chips in advance also and then put them in portion sized baggies so im all set to go in the morning.

I realize I have completely failed, my 6lbs in 6 weeks challenge has backfired.
HOWEVER considering my birthday is in 2 weeks, I am now shooting for a 2 week challenge. Unfortunately, I was unable to hit the gym today, but, I am running a half-marathon on Sunday!

This is an epicurious recipe. The only thing I did was increase the celery, edamame ratio and quadrupled the heat factor, as a result this recipe makes tons of salad. It is great as a side but also works well as a vegetarian entree.
