Caramelized Onion Flatbreads With Creme Fraiche
From Bon Appetit magazine
Bread dough
1/4 cup plus 1 tablespoon warm water (105°F to 115°F)
3/4 teaspoon active dry yeast
3/4 cup plus 2 tablespoons all purpose flour
3/4 teaspoon nigella (kalonji) seeds
1/2 teaspoon salt
1 tablespoon butter, room temperature
Caramelized onions
2 tablespoons extra-virgin olive oil
1 pound onions (about 2 medium), cut into 1/3-inch-thick wedges through root ends
2 teaspoons chopped fresh thyme
1 teaspoon honey
1 tablespoon Sherry wine vinegar
1/2 cup crème fraîche
1 large egg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Semolina flour (pasta flour) or cornmeal
2 tablespoons chopped fresh chives
For bread dough: whisk 1/4 cup plus 1 tablespoon warm water and yeast in small bowl; let stand until yeast is dissolved, about 10 minutes.Mix flour, nigella seeds, and salt in medium bowl. Add yeast mixture and stir with wooden spoon until mixture clumps together. Add butter; mix until incorporated.

This is a semi-homemade dinner.
1 box of Rigati pasta
2 jars of Italian sausage flavored spaghetti sauce
1 can of Italian flavored petite diced tomatoes
Onion powder, Salt, Pepper, Oregano, 3 garlic cloves, Nature Seasoning, Cinnamon, Parkay
Olive oil
1 bag of about 16 of your favorite brand of meatballs. I used 'Mama Lucia's fully cooked Italian meatballs'.

Chicken Selects Premium Breast Strips from McDonald's (5 pieces) with creamy ranch sauce
830 calories
55 grams (g) fat (4.5 g trans fat)
48 g carbohydrates
The only thing "premium" about these strips is the caloric price you pay. Add a large fries and regular soda and this seemingly innocuous chicken meal tops out at 1,710 calories.

One of my favorite friends is getting married on Saturday and as her last remaining single friend, I took her out to dinner on Tuesday to celebrate. Since it was Carolyn's special day, I let her pick the restaurant. Having just left the dressmaker after her final fitting, she was desperate to find a restaurant that was going to be scrumptious but still healthy.

Sun Dried Tomato Dip
Modified from Ina Garten
1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup fresh basil, torn into pieces
Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade.Add the basil and pulse twice. Serve at room temperature with crackers, croutons, pita crisps, or flatbread.
Makes 2 cups.

Ingredients
1 tbs. vegetable oil
1/2 an onion, chopped
1/2 tsp ginger paste
1/2 tsp garlic paste
1/2 tsp cumin powder
1/2 tsp coriander powder
1 tsp red chili powder (or more if you like it pungent)
salt to taste
a little bit of hot water (I usually boil some before cooking and add as needed from the kettle)
3 boneless, skinless chicken thighs, cubed
3 heaped tbs fat-free sour cream
2 tbs evaporated milk
1/2 tsp paprika
2 tbsp chopped fresh coriander leaves
Directions
Heat the oil in a medium non-stick pan. Gently fry the onion until brown.
