Heartburns... They suck! From time to time I get the most annoying heartburns after lunch.Cheesy Spinach and Artichoke Risotto -- with (a little) Beer!
This dish was inspired by my favorite appetizer, spinach and artichoke dip. Since it is based on bar food, it only seems right to season it with beer. The alcohol cooks off, and the remaining taste is slightly sweet, a perfect complement to the sharp cheese flavors.

"SCOTCH" SHORTBREAD COOKIES I don't know about you, but I have done way too much eating this holiday...especially when I'm supposed to be in race training! Ugh! I do know, though, that I have a horrible sweet tooth, and I just am not willing to give up some of my goodies...unless my arm is twisted!
