Here is a yummy fried chicken and potato wedge recipe that my family devours. It is not low in fat by any means. But I am a midwestern/southern gal and this is what we enjoy!

Pair colorful antioxidant-rich peppers with juicy, pink beef and this meal looks as appetizing as a Bon Appétit cover. Fresh or frozen precut produce eliminates prep work, so you can spend less time in the kitchen and more time watching the Food Network.
Prep time: 5 minutes Cook time: 10 minutes
Ingredients:
1 tsp jarred minced garlic
3/4 lb lean beef strips for stir-frying (pre-sliced in meat department)
4 c quick-cooking or boil-in-bag brown rice
2 Tbsp red pepper flakes (optional)
2 Tbsp sesame seeds (optional)
1 bag (12 oz) fresh or frozen stir-fry vegetables
1 container (5 oz) fresh diced tricolor peppers
1 can (8 oz) water chestnuts, drained
5 Tbsp stir-fry sauce
1 Tbsp vegetable oil
Directions:
Prepare rice according to package directions and cover to keep warm.

i saw this recipe on Hungry Girl's site, and while i havent tried it yet, it sounds delish!! i hope you guys try it, and of you do, please let me know how it turns out! ill prob try it soon, and then i do, ill update with pics.

When I posted my Handy French Fry Cutter Gadget, I promised I would post a "How To" on making yummy homemade french fries. So here it is:
First Cut Four or Five Large Potatoes and Cut them in Half Lengthwise
Place Potato in Slicer....(or you can cut by hand if you have the time and energy ;)
Pull Handle down and the Potato will move through the slcer cutting them into...
Perfectly Cut French Fries!

I’ve made this a few times and we all really enjoy it. It’s fast and easy too.
Ingredients
500g fresh egg noodles*
1 tablespoon vegetable oil
500g pork fillet, sliced thinly
2 cloves garlic, crushed
8 green onions, sliced thinly
¾ cup (180ml) beef stock
1/3 cup (95g) crunchy peanut butter**
¼ cup (60ml) sweet chilli sauce
2 teaspoons lemon juice
400g packet fresh asian-style stir-fry vegetables
Place noodles in a large heatproof bowl, cover with boiling water, stand until just tender; drain.

I love Potatoes! And I love to Make French Fries. I used to cut the french fries by hand but now I use a handy French Fry Cutter.

Start healthy eating with this waistline-trimming recipe. It has powers of MUFAs (monounsaturated fats) to create a serious flab-fighting meal.
TIME: 40 minutes
SERVINGS: 4
Ingredients:
3 c sm broccoli florets with short stems (about 1/2 lb crowns)
2 lg carrots, cut into thin diagonal slices (2 c)
5 oz soba noodles
1 Tbsp olive oil
1 Tbsp minced fresh ginger
3 lg cloves garlic, minced
2 boneless, skinless chicken breast halves (6 oz each), sliced crosswise
1 Tbsp reduced-sodium soy sauce
1 tsp toasted sesame oil
3 med scallions, thinly sliced (about 1/2 c)
1/2 c reduced-sodium, fat-free chicken broth
1/2 c raw, unsalted cashews (3 oz), lightly toasted (MUFA)
Directions:
Bring large pot of water to a boil.

Ingredients:
-chicken breasts, cut into nuggets or strips
-2 to 4 eggs
-a bit of milk
-seasoned bread crumbs (seasoning examples; garlic powder, parsley, basil, oregano etc)
-flour
-garlic powder to taste
-salt and pepper to taste
-vegetable oil, about an inch or two into the bottom of a frying pan
-enough seasoned bread crumbs, flour and eggs with milk to fill a small bowl EACH that you'll be able to fit and coat the chicken in
*Mix the eggs and milk together in one bowl
*Mix the flour, garlic powder, salt and pepper together in another
*Mix the bread crumbs with whatever seasoning you like, in a third bowl
*Dip and coat the chicken first into the flour mix, then the egg mixture and then the bread crumbs
*Fry in oil until brown and cooked thru
My favorite fried chicken EVER!!!
Excellent with ranch, bbq or what ever sauce you like or just on it's own!!!
Good with just about any side dish you can think of!!!

Although my family and I were the least-Jewish Jews ever (we never were bar- or bat-mitzvah'd, we never kept Passover or fasted during Yom Kippur) one of my favorite dishes from my childhood is a very Jewish dish - Matzo Brei, or Fried Matzo.
What is Matzo, you ask?
From Wikipedia: Matzo (also Matzoh, Matzah, Matza, Hebrew מַצָּה maṣṣā) is a Jewish food item made of plain flour and water, which is not allowed to ferment or rise before it is baked.
