Hey KGs!
I wanted to share my Thanksgiving menu and see if you had any ideas and/or advice. This is the first year we are going to deep-fry our bird.

2 loaves oven-dried white bread (recommended: Pepperidge Farm)
2 cups cooked white rice
1 sleeve crushed saltines
1 pound bulk breakfast sausage
2 cups chopped celery
1 large onion, chopped
7 cups chicken stock
Salt and freshly ground black pepper
1 teaspoon dried sage leaves
1 tablespoon poultry seasoning
3 eggs, beaten
1/4 stick butter, melted
Mushroom Giblet Gravy, recipe follows
Preheat oven to 350 degrees F.
Crumble oven-dried bread into a large bowl. Add rice and saltines.

The Big Day: Thanksgiving
Thanksgiving Morning
Prepare stuffing. Cover and refrigerate.
Wrap roasting pan with foil, or use disposable roasting pan or cooking bag for a quick cleanup.

One Hour before Dinner
Bake biscuits.
Fill small pitcher with half-and-half or milk for coffee -- cover and refrigerate. Fill sugar bowl.

Thanksgiving is a neat holiday - it's not about religion, it's about celebrating our country - or is it about drinking alcohol before noon, eating too much food, sitting around watching football, and napping on the couch.
What do I do on Thanksgiving and why? I pop the turkey in the oven, open up a bottle of wine, start cooking the side dishes - and this is all before noon.

Roast Sticky Chicken-Rotisserie Style

PREP TIME 10 Min
COOK TIME 5 Hrs
READY IN 5 Hrs 10 Min
4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 onions, quartered
2 (4 pound) whole chickens
Directions
In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel.
