Gingerbread Cookies
INGREDIENTS
1 1/2 cups dark molasses
1 cup packed brown sugar
2/3 cup cold water
1/3 cup shortening
7 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground allspice
2 teaspoons ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 (16 ounce) package White frosting
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease one cookie sheet.

NEW YORK – Nestle USA on Friday voluntarily recalled its Toll House refrigerated cookie dough products after a number of illnesses were reported by those who ate the dough raw.
The company said the Food and Drug Administration and the Centers for Disease Control are investigating reported E. coli illnesses that might be related eating the dough.

Stuck...stuck...stuck...in baking mode.
Perhaps because I cannot eat any of the treats I've made I cannot shut off the overwhelming urge to BAKE. Or perhaps my inner Martha Stewart/Gail Ganz has just taken over and I must succumb.

Moravian Spice Cookie Waffers
From Food Network Kitchens
This cookie comes to us from North Carolina by way of Central Europe; it's a classic, peppery spice cookie brought to the U.S. by Moravians in the 1700s. The key to this cookie is rolling it super-thin to get that characteristic snap; it's a lot easier to roll it that thin between waxed paper.

This recipe is very similar to the one my Mom used. We lost the recipe but this one seems about right.
Ingredients:
1/2 cup shortening
1/2 cup brown sugar
1/2 cup molasses
1/2 cup buttermilk
1/2 teaspoon vinegar
3 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ginger
2 teaspoons cinnamon
Directions:
Cream shortening with all the sugar gradually (cream thoroughly)
Blend in molasses
Sift 1 1/4 cups flour with spices and salt and stir into mixture
Add vinegar and remaining 2 1/4 cups flour, alternating with buttermilk
Chill dough in refrigerator, and then roll out to a thickness of 1/4 inch on a lightly floured board
Dip gingerbread cookie cutter in flour each time before using and press firmly and evenly into dough
Place gingerbread boys on baking sheet and bake 10-15 minutes in moderate oven (350-375 degrees F)
Place cookies on wire rack to cool
Ice/Frost & Enjoy!

Every year we (I) do a bunch of different Christmas cookies for friends, neighbors and family. I usually do sugar cookies with royal icing, gingerbread men (I got lazy and didn't frost them this year), lime meltaways...and this year I did fudge and Twinkle's Christmas Stars. Here is a snapshot of the plate this year!

Mad busy today! I got up early and baked a huge batch of cookies. I dubbed them UFO cookies but they are really called buried cherry cookies.
