Dulce De Leche Ice Cream & Choco Covered Graham Cracker Sandwiches

Dulce de Leche, recipe follows or you can purchase it
2 cups heavy cream
1 cup milk
1/2 cup sugar
6 large egg yolks
chocolate covered graham crackers, 2 per person
In a medium heavy saucepan, combine 3/4 cup of the dulce de leche, the cream, milk, and sugar. Bring to a gentle boil over medium heat. Remove from the heat.
Beat the egg yolks in a medium bowl.
Whisk 1 cup of the hot cream mixture into the egg yolks.

"Why not make your own healthy twix bar? I take 2 graham crackers (whole wheat), layer with sugar-free, low-carb (walden farms makes a great one) caramel, and sugar-free chocolate that is melted.

Inspired by YumSugar’s “52 Weeks of Baking” and the success of last week’s cupcakes, I have decided to take on my own weekly baking challenge. Of course, I waited until the last day of week two to make this decision, the same day Boston was swept by a massive snowstorm. Ok, I admit, the weather was not that bad, but it was enough to discourage me from trekking across slippery, slushy sidewalks to the grocery.

Makes 6 servings
Prep Time: 10 min
Cook Time: 10 min
Ingredients
1 can (14 ounces) pumpkin, chilled
3 ounces reduced-fat cream cheese
1 container (6 ounces) lowfat vanilla yogurt
2 cups lowfat milk
1/4 cup brown sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
6 teaspoons graham cracker crumbs, optional
Place all ingredients (except graham cracker crumbs) in a blender and blend until smooth. Pour into glasses and top each serving with a teaspoon of graham cracker crumbs, if desired.
Yield: 1/6 of the shake, per serving

Chocolate-covered graham crackers make their information-age debut just in time for the start of a new school year.
RECIPE INGREDIENTS:
2 chocolate-covered graham crackers
White decorators' icing
Cupcake
Frosting
1 3/4-inch piece shoestring licorice
Small round candy (we used an M&M)
1. Create a screen on one of the graham crackers by smearing a bit of frosting into a rectangle with a butter knife.

I was reading the recipe for "faux fruit tarts", and I remembered this one I used to make a few years ago. I haven't made it in a while b/c if I keep graham crackers in the house I will eat the whole box!! :P Not really, but these are tasty and you can make 'em as healthy as you want.

In response to Mme. hart's request for a healthier pumpkin cheesecake recipe, I spent the weekend, calculator in hand, working on lightening up my recipe. I ended up with one that was great tasting and had a real cheesecake texture by using 1/2 light cream cheese and 1/2 yogurt cheese.

I don't know about anyone else out there, but working full time can take a toll on your lunch creativity. When it comes to getting up early enough to make a decent packed lunch, vs. sleeping in, i opt for more sleep.
