Mmmmm potatoes and cheese, the combination is mouth-watering!
I love cheese, don't we all? I have been experimenting alot with Gruyere cheese, it's so yummy!

CHICKEN CORDON BLEU WITH HOLLANDAISE SAUCE
Adapted from recipe courtesy of Chef Steve Jenkins, Winthrop Rockefeller Institute (My Teacher!!!)
For chicken:
4 (10-ounce) chicken breasts, pounded out to 1/2-inch thickness
8 ounces thin-sliced ham
4 ounces Gruyere cheese (Swiss cheese may be substituted)
Breading:
1 cup all-purpose flour
1 cup ground biscuit crumbs
1 cup ground bread crumbs
1/2 tablespoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 tablespoon paprika
1/2 teaspoon Cajun seasoning
Egg Wash:
4 eggs, well beaten with 1 tablespoon water
Hollandaise Sauce:
2 fl. oz. red wine vinegar
1/2 teaspoon whole black peppercorns, freshly cracked
6 egg yolks

Went to Cost Co this weekend and they had the most amazing asparagus so I bought a package. Ate some with steak on Monday but last night I made the tart below for a get together with the girls. It was pretty amazing and received rave reviews.

INGREDIENTS
1 cup dry white wine
1/2 pound shredded Swiss cheese
1/2 pound shredded Gruyere cheese
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 (1 pound) loaf French bread, cut into 1 inch cubes
DIRECTIONS
Simmer wine in fondue pot. Add Swiss cheese, Gruyere cheese, 1/4 pound at a time. Stir after each addition of cheese until melted.

This soup is very soothing for dinner during winter.
Its full of delicious combinations, sweet and creamy from the sweet potato and carrots and chickpeas to finish off the pleasurable taste and texture.
The spices just add in that touch of magic the soup needs for those innocent punchy flavors.

This dish was inspired by my favorite appetizer, spinach and artichoke dip. Since it is based on bar food, it only seems right to season it with beer. The alcohol cooks off, and the remaining taste is slightly sweet, a perfect complement to the sharp cheese flavors.

Cheese balls are always a huge hit with my family for Christmas, but I'm not a fan of cream cheese. This one looks a little more like my kind of recipe!
Lemon-Basil Cheese Ball
From Simply Homemade Food Gifts
1 8-ounce carton mascarpone cheese
1 cup shredded Gruyere cheese (4 ounces)
3 tablespoonss finely chopped pistachio nuts
2 tablespoons finely snipped fresh basil
4 teaspoons finely shredded lemon peel

This recipe comes from Ina Garten and it's very easy to put together. I made it around the holidays when I felt the need for an extra vegetable, but still wanted to keep things a little bit more rich and special.

I don't think I've ever made a frittata until now!
It is so delicious and full of fantastic flavors all in one dish!
I made it for my mom and I last night for dinner and it was so simple to make.

This Christmas, my boyfriend's brother made a delicious French Onion soup with little mini toasts with Gouda, Percino and Gruyere cheese. I prefer the little toasts to the soggy bread and cheese topping that usually accompanies traditional French onion soup.
