(The food, not me.)
I had a slight money freak-out yesterday after paying $3.99/gallon for gas for the truck. I was going to make a huge batch of fried chicken (yum), but decided I didn't want to fork out any more money. So last night's menu was grilled ham & cheese and tomato soup.

Yet another recipe I found on allrecipes and really enjoyed. I found that it's incredibly filling and you can use whatever pizza toppings you have on hand.
INGREDIENTS
2 (10 inch) flour tortillas
1 1/2 cups shredded part-skim mozzarella cheese, divided
1/4 cup pizza sauce
1/2 cup pineapple tidbits, drained
3/4 cup diced fully cooked ham
DIRECTIONS
Place one tortilla on a baking sheet coated with nonstick cooking spray.

Nothing beats a delicious plate of Spanish cheese and fresh sliced ham. I arrived last night and went straight to my friend Paco's restaurant, Paco Acedo, for a tasty tapa. Oh man was the ham good!

So I told you about the Easter lime tart I made but I bet some of you were wondering what we had for dinner. Well here it is: homemade macaroni and cheese, roasted tomatoes and zucchini, and ginger ale-glazed ham. It was totally divine.
