I went to a bbq last night and was asked to bring a side dish. I had recently been watching Giada on Everyday Italian and she made this salad that looked amazing and I decided to make it with just a small change. 1 pound orzo pasta 3 tablespoons extra-virgin olive oil, plus 1/4 cup 2 cups fresh arugula (about 3 ounces) (I couldn't find arugula in my grocery store so I used baby spinach instead) 3/4 cup crumbled ricotta salata cheese (or feta cheese) (amazingly I was able to find this cheese!Boston's $14.8B Big Dig finally complete
