I had dessert duty for a get together this weekend and I found this recipe from Better Homes and Gardens. It sounded strange using shredded sweet potatoes, but I thought it turned out great and was big hit. It is for a 3-layer cake, but I only had 2 9" round pans, so I made the two rounds and poured the extra batter into a loaf pan.

Lemon Chicken Soup

3 (10.75-ounce) cans condensed chicken and rice soup (recommended: Campbell's)
3 cups low-sodium chicken broth (recommended: Swanson's)
1/3 cup lemon juice
3 egg yolks, lightly beaten
1 cooked, store-bought roasted chicken breast, shredded
1 tablespoon finely chopped fresh parsley leaves
In a medium pot, over medium-high heat, add condensed chicken and rice soup, chicken broth and lemon juice. Bring to simmer.
In a small bowl, lightly whisk egg yolks.

Cheesy Apple Pancakes

Prep Time: 10 min
Total Time: 22 min
Makes: 12 servings, 1 topped pancake each
2 cups complete pancake mix
1-1/2 cups milk
1 cup KRAFT Shredded Sharp Cheddar Cheese
1 medium apple, peeled, cored and shredded
Optional Ingredients
3 cups mixed fresh berries (strawberries, blueberries and raspberries)
1-1/2 cups maple-flavored or pancake syrup
Directions
BEAT pancake mix and milk in large bowl with wire whisk until well blended. Stir in cheese and apples.
LADLE batter into hot greased skillet, using 1/3 cup batter for each pancake.

I found this on Allrecipes.com and thought since Asparagus is all over right now, I would post it to the group. It looks really good...I mean, it has CHEESE in it!!!
1 pound fresh asparagus
3/4 cup chopped onion
1/2 cup vegetable broth
