Whenever recipes call for lemon juice — a tablespoon, a cup, whatever — I never know how many lemons to buy for the right amount of juice. Is there any good rule for how much juice one large lemon is likely to produce?

Lemon Curd
From Simply Homemade Food Gifts
1 cup sugar
1 1/2 teaspoons cornstarch
4 teaspoons finely shredded lemon peel (set aside)
1/3 cup lemon juice
1/4 cup butter, cut up
3 beaten eggs
Directions
1. In a medium saucepan (not an aluminum pan) combine sugar, cornstarch, and lemon juice.

I found this recipe on the Container Store website - of all places! It's on the webpage of the bottle that they sell (pictured below) that can be used to store the lemon vodka.

Prep time: 10 mins Marinade time: 4+ hours Cook time: 10 mins
1 cup lemongrass diced (if not available, substitute for 1 lemon or 3-4 tblspns of lemon juice)
3 tblspns minced fresh ginger
1 1/2 tblspns minced garlic
1/2 cup white wine
3 tblspns fish sauce (can sub. soy sauce)
2 tblspns soy sauce
2 tblspns lemon juice
1.5 lbs of chicken cut into strips
skewers
crushed peanuts
diced scallions
Combine all ingredients except peanuts scallions and skewers in a big zip lock bag. Let chicken marinade for 4+ hours.

Lemon Truffle Parfaits
From Suite 101
Make this dessert ahead of time and store it, well covered, in the fridge. When you're ready to serve, top with the mint leaves and a dollop of whipped cream and serve with long iced tea spoons.
1/2 cup whipping cream + some for topping
1/2 cup white chocolate chips
1 cup lemon curd (make your own or buy it store bought)
6 sugar cookies
1 cup fresh raspberries
4 mint sprigs
In small heavy saucepan, combine 1/2 cup whipping cream with the white chocolate chips.

Whenever me and my cousins would visit one of our Auntie's she's always have a gogeous lemon cake waiting for us. I loved it so much that I asked for the recipe so I can make for myself, which is a bonus because I don't have to share with alot of greedy cousins! :D
Ingredients:
170g (6oz) Self Raising Flour
170g (6oz) Margarine
225g (8oz) Caster Sugar or Brown Sugar
2 Large Eggs
1 Lemon
Method:
Pre-heat oven to 190°C; 375°F; Gas 5
Grease an 8 inch by 10 inch baking tin.

Cheese balls are always a huge hit with my family for Christmas, but I'm not a fan of cream cheese. This one looks a little more like my kind of recipe!
Lemon-Basil Cheese Ball
