Lemon Curd
From Simply Homemade Food Gifts
1 cup sugar
1 1/2 teaspoons cornstarch
4 teaspoons finely shredded lemon peel (set aside)
1/3 cup lemon juice
1/4 cup butter, cut up
3 beaten eggs
Directions
1. In a medium saucepan (not an aluminum pan) combine sugar, cornstarch, and lemon juice.

Lemon Truffle Parfaits

Make this dessert ahead of time and store it, well covered, in the fridge. When you're ready to serve, top with the mint leaves and a dollop of whipped cream and serve with long iced tea spoons.
1/2 cup whipping cream + some for topping
1/2 cup white chocolate chips
1 cup lemon curd (make your own or buy it store bought)
6 sugar cookies
1 cup fresh raspberries
4 mint sprigs
In small heavy saucepan, combine 1/2 cup whipping cream with the white chocolate chips.

Creamy Citrus Tartlets-greece

2 (2.1-ounce) packages frozen mini phyllo pastry shells
1 cup whipping cream, divided
1/3 cup orange curd*
1/2 teaspoon almond extract, divided
1/3 cup lemon curd
Garnish: fresh mint leaves
Preparation
Bake pastry shells according to package directions; cool completely.
Beat 1/2 cup whipping cream, orange curd, and 1/4 teaspoon almond extract at medium speed with an electric mixer until thickened and soft peaks form. Spoon the mixture evenly into half of pastry shells.

So I have run a few ideas by my sister for her wedding cake, most of which she has turned down, but some of which she loved and gave the go-ahead for. She vetoed the lemon cake with lemon curd filling and vanilla buttercream, which I thought was delicious, but she and her fiance didn't hate, but didn't love.
I'm moving on to a white chocolate cake with white chocolate buttercream as the filling and outside frosting.

Scones and I were never properly introduced. By the time they made it into the American culinary world, I was not able to eat them. However, if I could eat a gluten-filled scone, I imagine it would taste just like this – light and tender to bite but substantial enough to satisfy.
