Easter Lemonade Cupcakes

These cupcakes are really sweet, I would maybe cut out 1/4-1/2 cups of sugar, depending on how sweet the lemonade concentrate is. Also, the cake is quite crumbly, like a muffin - I would consider adding another egg to the mixture.
3 cups cake flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup (2 sticks) butter
1 cup sugar
1/2 cup + 2 tbsp lemonade concentrate
3 eggs
3/4 cup milk
lemonade frosting (see recipe below)
1 1/2 - 2 cups sweetened coconut flake
green food coloring
48 chocolate candy eggs
This recipe makes 24 cupcakes.

I saw a recipe for Watermelon Champagne Soup - which reminded me to post this recipe for Watermelon Lemonade that I made over the holiday weekend. It is SO easy!
1/4 cup powdered lemonade mix - I use Country Time
1 cup ice
2 cups water
3 cups watermelon (cubed or scooped into smaller pieces)
Add ingrediants to blender, blend until smooth and serve.

A cure all for those hot summer days!! I live in the south so it gets pretty darn hot and this slush cools you down instantly and its as simple as making a gallon of Kool-Aid!!! You can also substitute the lemonade for limeade and the strawberries for raspberries or even blackberries!!

I made these last year during the summer. They were such a hit, even the normal beer drinking 'macho men' liked them.
Pink Lemonade Margarita - 5 servings 1 cup each

Sparkling Honey Lemonade in Citrus-Salt Rimmed Glasses - Serves 8
Original recipe from Whole Foods.
Ingredients:
1 cup freshly squeezed lemon juice
1/2 cup honey
6 cups sparkling or still cold water
Zest of 1 lemon
coarse finishing salt of your choice
lemon or lime wedges
Combine lemon juice and honey in a saucepan. Heat until honey is completely blended with the juice.

I frequently buy the Arizona Tea version of this drink, but it's fun and more economical to make your own. Just mix equal parts of Lemonade and Tea together for a refreshing drink. If you want to make it with alcohol, try adding vodka or your favorite flavored vodka to it.

I really enjoyed all the help that you all gave me coming up with great ideas for the Luck of the Irish Basket for my parents' belated anniversary present. I've started collecting a few ideas and once I get another paycheck, I plan to make the basket into a reality! (And I'll post the final product.
