I love copy cat recipes, and even more I love Applebee's Blondie recipe -so I found this great recipe for it here
Ingredients:
1 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter or margarine
1 cup packed brown sugar
1 egg -- beaten
1 tablespoon vanilla extract
1/2 cup white chocolate chips
***Maple butter sauce: ***
3/4 cup maple syrup
1/2 cup butter
3/4 cup brown sugar
1/2 cup walnuts, chopped (optional)
Directions:
Preheat oven to 350º.
Sift flour, add baking powder, baking soda, and salt. Sift again.

For The Syrup:
1/3 cup pure maple syrup
1/4 cup whole berry cranberry sauce
For The Pancakes:
1/2 cup quick-cooking or old-fashioned oats
1/2 cup all-purpose flour
2 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 pinch ground nutmeg
1 cup + 2 Tablespoons buttermilk (regular milk will work)
2 large eggs
2 and 1/2 Tablespoons vegetable or canola oil
Prepare the syrup by heating both ingredients together in a small saucepan over medium heat. Stir until cranberry sauce is incorporated. Reduce heat to low to keep warm.

Yesterday, I had a crummy, stressful day at work. It was one of those days when the higher-ups are freaking out about an impossible deadline at the end of the week, getting everyone else all stirred up and anxious, only to find out later that the deadline is actually two weeks away. It was frustrating and tiring.

like today , i knew i made my mother irritated as she wanted to run 6rounds, but i made her go after she completed 3 and me completed 1.
and say ' @ night still can go what.'
and then i decided to treat her better by taking a chair for her, getting a plate for her to put her pancake and such.

Mix low fat plain yogurt with real maple syrup and Ceylon cinnamon to taste. Start dipping those apple slices and just try to stop!
Note: Ceylon cinnamon has a bit of a citrus-y tone to it. It goes great with fruit and is worth seeking out. One reliable source is Penzey's Spices.

I couldn't believe how good these were. The combination of tahini + grain (oatmeal) makes a complete protein.

Karma gave me this recipe and I haven't tried out yet but it sounds delicious! :drool:
Puffy Oven Pancake
2 Tablespoons butter or stick margarine
2 large eggs
1/2 cup all purpose flour
1/2 cup milk
1/4 teaspoon salt
Lemon juice and powdered sugar or cut up fruit, if desired
1. Heat oven to 400.

I haven't actually tried this recipe--yet. It's from the cookbook, CalciYum! and a friend of mine who has made it, said it was outstanding!
