Squeaky's blog about what we wished we were eating right now got me thinking about one of my favorite meals EVER - the Chicken Sorrento with Spaghetti Marinara at Ralph's Italian Restaurant in South Philly. Ralph's is the oldest family-owned Italian restaurant in the US and they serve very old-school, traditional food.
Luckily they post recipes on their website.

Here's a great meal I threw together for myself the other night.
It's Ezekiel Sprouted Grain Penne with spinach and marinara sauce. Simple, but wonderful!

Ingredients
2 fiber crackers
2 Tbsp marinara sauce
3 Tbsp grated parmesan cheese
Directions
Top fiber crackers with 1 Tbsp marinara sauce on each. Sprinkle with cheese. Microwave for 15 seconds.

Here, submitted for your approval, are several different calzone recipes. They contain various ingredients, have different methods, and several methods of preparation. The great thing about this dish is that you can experiment with it!

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

Appetizers
Marinate mixed olives (jar) with freshly grated peel and juice from 1 lemon in refrigerator at least 24 hours.

I originally found this recipe on allrecipes, but, me being me, I have twisted it a little. It's a great recipe to experiment with, one of my favorite things to do!
INGREDIENTS
1 tablespoon butter or olive oil (I've used either and also Smart Balance)
2 - 3 medium zucchini, cubed
1 pinch red pepper flakes
salt and pepper to taste
1 cup marinara sauce (Or whatever spaghetti/pasta sauce you have on hand)
1 1/2 cups shredded or sliced mozzarella or provolone cheese (I use whatever italian cheese I have handy.)
4 (6 inch) Italian sandwich/sub rolls, split
Personally, I love garlic, so I also add that as well - minced, garlic powder, you name it.

Redbook madras chickenYesterday, I spent 1 1/2 hours in a prep kitchen preparing my family meals. I prepared six servings of the following dishes and this will feed my family until the first week in October! Using the prep kitchen and freezing my meals makes it easier for me to work my crazy hours and still come home and cook (which I love to do).

and it did not go well. Every week I have to schedule one "cheat meal" in my cheat day. I am thinking of dumping this day altogether.

Responding to N e e c a l l e's poll What food is the most likely to make you want to stray from your diet? got me thinking about pasta and ended up with meatballs.
I meant to get ground beef and ground pork, but picked up the wrong package and got beef and lamb instead, worked great.
