Balsamic Strawberries with Whipped Mascarpone
Original recipe form The Fresh Market.
Ingredients:
• 1/3 cup balsamic vinegar
• 2 teaspoons sugar, plus 5 tablespoons
• 1/2 teaspoon fresh lemon juice
• 1/2 cup Mascarpone cheese, chilled
• 1/2 cup whipping cream, chilled
• 1/2 teaspoon vanilla extract
• 3 pints strawberries, hulled and halved
Combine balsamic vinegar, 2 teaspoons sugar and lemon juice in a small heavy saucepan. Stir over medium heat until sugar dissolves.

Fellow Kitchen Goddesses,
Does anyone have any delicous mascarpone cheese recipes? I made Chocolate-Glazed Hazelnut Mousse Cake yesterday and now I have half a large container of the cheese leftover. Since it is very expensive I don't want it to goto waste.

I tried this mascarpone gelato this weekend when I was in NYC and I feel like Giada when I say this but it was so light, creamy, and delicious I couldn't believe it. Beware the container is quite small and if I wasn't served it on a plate as part of a dessert I most likely would have eaten the entire teeny carton by myself, in one sitting.

Creamy Artichoke Soup
From Giada De Laurentiis
2 tablespoons extra-virgin olive oil
2 leeks, white part only, washed well and chopped
1 clove garlic, minced
1 small potato, peeled and chopped
1 (8-ounce) package frozen artichoke hearts, thawed
2 cups chicken stock
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 tablespoons plus 1/3 cup mascarpone cheese
2 tablespoons chopped chives, for garnish
Heat olive oil in a heavy, large pot over medium heat.Add the leeks and the garlic and stir. Add the potatoes and cook for 5 minutes, stirring often.Add the artichokes, stock, salt, and pepper and cook until the vegetables are tender, about 20 minutes.Using a handheld immersion blender, or in a blender in batches*, puree the soup. Add the 2 tablespoons mascarpone and blend again to combine.In a small bowl, stir the remaining 1/3 cup mascarpone to soften.Ladle the soup into serving bowls.

Cupcake
6 eggs, separated (separate when cold; allow to come to room temp)
3/4 teaspoon cream of tartar
1 cup sugar, divided
3 tablespoon water, room temp
1 teaspoon vanilla
1/8 teaspoon salt
1 cup sifted, all-purpose flour (measure after sifted)
In large mixing bowl at high speed, beat egg whites with cream of tartar until foamy. Add half of the sugar, 2 tablespoons at a time, beating constantly until sugar is dissolved and whites are glossy and stand in soft peaks. Rub just a bit of meringue between thumb and forefinger to feel if sugar has dissolved.

Cheese balls are always a huge hit with my family for Christmas, but I'm not a fan of cream cheese. This one looks a little more like my kind of recipe!
Lemon-Basil Cheese Ball
From Simply Homemade Food Gifts
1 8-ounce carton mascarpone cheese
1 cup shredded Gruyere cheese (4 ounces)
3 tablespoonss finely chopped pistachio nuts
2 tablespoons finely snipped fresh basil
4 teaspoons finely shredded lemon peel
1/8 teaspoon pepper

6th Chapter
It was in August and for the first time in my life I was able to eat camel meat. Camel meat is very delicious. The animal has to be young and the piece has to be fm the part which is below the hunch.

For my pirate movie night tonight I made these, spiced rum and chocolate cupcakes with carmel cream frosting.
For the cake, I used the recipe here

I didn't make the glaze the in the recipe, and I used chocolate pudding instead of banana.
The frosting is made like you would make cream cheese frosting, but I used BelGioioso Dolce Mascarpone instead of cream cheese.
