I love me some mashed potatoes, especially on Thanksgiving. The problem is that this dish is usually overloaded with tons of butter and cream, which can be a big problem if you're trying to stay healthy. One way I make my mashed potatoes healthier is by using Yukon Gold or Yellow Finn potatoes instead of the old stand-by, Russet potatoes.

Here's the pics (below the recipe) - my flash is messed up on my camera so they look pretty crappy but oh well.. Ignore my ugly stove too, please. It's about 20 years old, came with the house, and I hope we can replace it this year.

This is a great way to use up leftover mashed potatoes. SO good. I had this omelette in a cafe once and I make it at home once whenever we have the leftovers.

I just made this tonight. It's fabulous and pretty easy. Basically you stuff the mashed potatos under the skin of the chicken breast and cook.

While most people were out either trick-or-treating or swiping some of their kid's candy, I decided to take the opposite route and make myself an impromptu healthy dinner.
What you see is:
- roasted vegetables
- mashed yams
- steamed asparagus and zucchini
- quinoa
As some of you may know, I am no chef, so all of this delicious food was really easy to make.
Roasted Vegetables
Zucchini, carrots, potatoes, onions, and sweet potatoes with olive oil, rosemary, thyme, sea salt and pepper, baked for about 20 minutes.

Tandoori turkey in the oven
For a few years now I've wanted to try to marry the traditional Southern Indian food my husband grew up enjoying with Thanksgiving as I know it (Southern girl with a love of spice and heat).
So this year I did a trial run of a tandoori-style turkey made in the oven. By next year I hope to build my own tandoor, or at least grill this guy, because it needs a little more heat to crisp up properly.

Okay, we have some serious Mashed Potato eaters at my house (including me), so we make a ton of potatoes when we are gonna mash them! This is what me make if there's gonna be 3 or 4 of us .
Peel 10 medium potatoes and slice or cube into equal pieces.

I made SPM's Chicken Pot Pie with Mashed Potato Top for dinner last night. Here's the original recipe:
1 roll and bake pie crust
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon thyme
1/2 cup chicken broth
1/2 cup light cream (20%) ( I actually used heavy whipping cream and it was fine)
2 cups cubed cooked chicken or turkey
1 can (1 pound) peas and carrots, drained, or 1 package (10 oz.) frozen peas and carrots, cooked and drained
handful (maybe 1/3 cup) cooked edamame
mashed potatoes (from 3 large potatoes)
Heat oven to 425
Melt butter in large saucepan over low heat.
Blend in flour, salt, pepper and thyme.
