Yesterday I was in my usual baking mood and all I knew was that I wanted to make muffins!
It had to be different though, something new, something that had to do with fruit I had most.
That fruit was mangoes.

I'm sure that by now everyone is probably calling muffin girl!
I know, I know, I've been going crazzzy with muffins lately, but I just can't help it!
Muffins are so darn good, their like mini cakes, ready to eat, just right portion sized lil cakeys.

i love weekends cos that's when i do my baking/cooking. i was reading this recipe book called 101 Cakes and Bakes: Tried and tested recipes and came upon something i really liked: Strawberry Cheesecake Muffins!
I tweaked their recipe a little, and here's what i came up with:
INGREDIENTS
350g/12oz plain flour
1.5 tbsp baking powder
140g/50z caster sugar
grated rind of 1 large orange
grated zest of half a lemon
0.5 tsp salt
2 eggs
250ml milk
85g/3oz butter, melted
FILLING
85g/3oz cream cheese
1 tbsp caster sugar
strawberry jam

Ingredients:
3 eggs
1 cup (200 g) sugar
5 oz (140 g) almond flour (2 cups almond meal or finely ground almonds)
6 tablespoons unsweetened cocoa powder
2 tablespoons (1 fl oz) vegetable oil
1 teaspoon baking powder
2 teaspoons vanilla
Method:
1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).

Top of the Muffins To Ya

2 1/2 cups whole-wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp clove
1/2 tsp ginger
2 sticks of butter, room temperature
1 cup brown sugar
1/2 cup sugar
3 eggs
1 tsp vanilla
1/4 cup milk
1 cup cooked couscous
1 cup rolled oats
1/2 - 1 cup crushed/toasted almonds - I eyeballed it
1/2 - 1 cup chocolate chunks - or use chips - I just used what I had left
- Preheat oven to 375F
- In a mixing bowl combine, flour, soda, powder, salt, cinnamon, nutmeg, clove and ginger. Whisk or sift to combine thoroughly. Set aside.
- In a mixer cream butter until it's light and fluffy - I turned it on and let it go for a few minutes.
- When butter is creamed add in brown sugar, then white and mix until both are throughly incorporated and the mixture is smooth and creamy.
- On low speed, add eggs one at a time, making sure each egg is mixed before adding the next.
- When eggs are incorporated add in vanilla.
- Add the flour mixture to butter mixture, 1/3 at a time.

This is an oldie, but a goodie :D
Based on Giada De Laurentiss’s recipe originally published on the Food Network
Makes 18 Muffins (or do what I did and bake 12 muffins and spoon the rest of the batter into a loaf pan and bake for 40-45 minutes)
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups sugar
1 cup vegetable oil
3 large eggs
1 tablespoon vanilla extract
4 ripe bananas, peeled and coarsely mashed
1 cup walnuts (Note: Totally optional, but I can’t imagine banana anything without some crunchy walnuts).
Line 18 muffin cups with paper liners. Preheat the oven to 325 degrees F.

I got this recipe from SparkPeople and have made it about 6 times in the past couple months! They are yummy and filling.
