I promised Kastarte2 that I would post some curry recipes, so here is one of my favorites. It is from a restaurant here in Seattle called Cafe Flora (hubby bought me their cookbook for Mother's Day last year!). I usually eat here once every few weeks!

This was SO delicious, and only 120 calories per serving!
I am in culinary school and yesterday I had my Nutritional Cooking class. We worked on Salads, Soups and Appetizers and as soon as I saw this on our production list, I said I would make it (due to my love for goat cheese).

Okay, I'll admit right off the bat that this recipe isn't for me. I am not a big fan of mushrooms, but I noticed that several of you wanted to see this recipe! So I'm happy to oblige and I hope that you all who do enjoy mushrooms also enjoy this recipe!

Since I was cooking a mushroom quiche today, I decided to do a internet search and find out some more about how mushrooms benefit my diet. I was quite pleased with what I found out! It turns out these rubbery little things pack quite a nutritional punch.

Grilled or roasted portobello mushrooms have a meat like texture and flavor. I like to saute the portobellos in a red wine, like a burgundy--it tastes extraordinary!
2 jumbo portobello mushrooms, trimmed, rinsed and patted dry
1/4 C Burgundy wine (plus a bit more to drink as you cook)!

Baked Rigatoni with Ham and Mushrooms
Ingredients
6 oz. button mushrooms
2 Tbs unsalted butter, plus 6 Tbs
12 oz rigatoni
¼ cup all-purpose flour
2 ½ cups milk
pinch of grated nutmeg
salt and freshly ground pepper
4 oz Swiss cheese, cut into julienne strips
6 oz ham, roughly chopped
Method
Cut off and discard mushroom stems, wipe clean with towel and thinly slice. In a frying pan over medium heat melt 2 tbs butter.

Nicholas Evans, author of the best-selling 1995 novel The Horse Whisperer, is ill after eating poisonous mushrooms while vacationing in Scotland.
The 58-year-old Evans, his wife, her sister and the sister's husband became sick after cooking and eating the mushrooms – which included the highly toxic variety Cortinarius speciosissimus — which they had picked in the woods August 23.
Cortinarius speciosissimus is known to attack the kidneys.

I don't think I've ever made a frittata until now!
It is so delicious and full of fantastic flavors all in one dish!
I made it for my mom and I last night for dinner and it was so simple to make.

This is from Totally Dairy-Free Cooking by Louis Lanza and although I haven't actually tried it yet, it sounds delicious! I have enjoyed most of the recipes from this book, so I'll try it soon, but in the meantime, if anyone's brave enough to try it, be sure to let us know how it is!
3 cups cremini mushrooms
1 Tbs minced garlic
1 Tbs minced shallots
1 Tbs balsamic vinegar
Salt and black pepper
1 cup green lentils
1/2 cup walnut pieces
1/2 cup chopped fresh basil
1 tsp ground bay leaves

2 tsp barley miso
3 Tbs olive oil
Toasted pita wedges, rice cakes, or Belgian endive, for serving
Preheat oven to 350.
