I played around with a combination of recipes I already had lying around and what I had hanging around in my fridge and pantry and came up with this recipe. It's a cross between a stroganoff and drunken noodles I would say:
cooking spray
1/2 medium onion, chopped
1/2 red pepper, chopped
1/2 green pepper, chopped
1/2 lb ground turkey
1 egg
1 cup chicken stock*
2 tbs cup low sodium soy sauce
3 tbs mirin
1 tbs brown sugar
broad egg noodles, cooked according to package directions**
1/2 nori sheet, diced
2 tbs sesame seeds, toasted
Cook noodles according to package instructions. While noodles are cooking, saute onion and peppers over medium high heat until onions are soft.

I think that I'm intrigued by this dish because it somehow manages to put together the foods that I lived off of in college. I just never would have imagined combining them.
It may not be the healthiest dish, in this form, but I also imagine that you could switch out the ramen and add in rice or noodles instead.

I spent yesterday sitting at home, nursing a sinus infection and wondering what I could possibly have for lunch with the few staples we still actually have in our chicken. For whatever reason (probably because I was cold) I really wanted some soup. Chicken noodle soup, to be exact.

I've made this dish before and I can verify that it's quick, easy, and pretty tasty! I tend to use whatever stirfry I have on hand, particularly since I'm not a big fan of water chestnuts and we usually end up with no leftovers. Tasty!

I'm trying to eat more healthy and incorporate tofu into my meals. Lately I have been trying to use more coconut in my meals as well, even though it's not necessarily the most healthy item to include. And being the "bad" person I am, I feel that since I am using tofu I should be able to use coconut and even it out.

Everyone I know around here is getting sick. And even though it seems like the bad weather and winter is almost over with, I still think a nice bowl of chicken soup helps make it all better. Although my one co-worker still burps and farts like the pig he is, so it can't fix everything.
