Sometimes you just gotta have a warm chewy cookie! The recipes for low carb and low fat oatmeal cookies are usually tasteless and soooo dry! Here's a lightened up recipe (from my light cooking "Bible" the America's Test Kitchens Cookbook.) that I was able to take it even lower - without sacrificing taste or texture.

the recipe calls them 'vegan oatmeal cookies.'
i call them 'wonderful little disks of chewy, sweet, delicious, cookie-like goodness that also happen to contain no animal-derived ingredients.'
these satisfy my sweet tooth perfectly.

I had made these Oatmeal Raisin cookies for nurse's week the other day and everyone loved them! So of course, I thought I would share...
Recipe was taken from Allrecipes.com
Oatmeal Raisin Cookies

Ingredients:
3/4 cup butter, softened (1 1/2 sticks) - [I only used 1/2 cup (1 stick)]
3/4 cup white sugar - [I only used 1/2 cup]
3/4 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon - [I added a bit more for taste]
1/2 teaspoon salt
2 3/4 cups rolled oats
1 cup raisins - [I actually put in 1 1/2 cup]
I took the advice of some of the reviewers and added a dash of ground nutmeg, cloves, and ginger as well.

I'm sure that by now everyone is probably calling muffin girl!
I know, I know, I've been going crazzzy with muffins lately, but I just can't help it!
Muffins are so darn good, their like mini cakes, ready to eat, just right portion sized lil cakeys.

Oatmeal Peanut Butter Cookies
Ingredients:
½ cup shortening
½ cup butter, softened
1 cup packed brown sugar
¾ cup peanut butter
2 eggs
1 ½ cup all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup oats
½ cup chocolate chips
Directions:
Preheat oven to 3500
In a large bowl mix together shortening, butter, brown sugar, white sugar & peanut butter until smooth. Beat in eggs one at a time until well blended. Combine flour, baking soda & salt; stir into the creamed mixture.

These have to be one of my all-time favorite cookies. Super easy to make, and so delicious!
Cook Time: 15 Min + time for cooling afterwards.

Ingredients:
1/2 Cup Butter, Melted
1/3 Cup White Sugar
1/3 Cup Brown Sugar
1 Egg
1/2 Tsp Vanilla Extract
1 Cup Flour
1/2 Tsp Baking Soda
1/2 Tsp Cinnamon
A Pinch of Salt
1 1/2 Cups Instant Oats
1 Cup Raisins
Directions:
1.Preheat oven to 180C. Place raisins in a bowl of water and microwave for 2 minutes. Drain raisins and let cool for 10 minutes.
