My boyfriend makes these all the time and they're AMAZING. We got the recipe from an old issue of Bon Appétit magazine.
We usually serve them with mashed or roasted potatoes and steamed green beans which we toss in olive oil, fresh lemon juice, and garlic.

Maple-Bourbon Pork Medallions
I also like to serve this dish with my favorite cooked pasta (whatever I have on hand at the moment) so I can drizzle extra maple-bourbon sauce all over it. Goes great with a baby spinach salad with mandarin oranges, sliced roasted almonds, and low-fat raspberry vinaigrette.

1 pound pork tenderloin, all visible fat removed
1/3 cup maple syrup
1/3 cup bourbon (recommended: Southern Comfort) or unsweetened apple juice
2 tablespoons whole-grain mustard or Dijon mustard
2 tablespoons ketchup
Vegetable oil cooking spray
Cut pork into 12 slices and flatten each with the palm of your hand to about 3/4-inch thickness.

I got this recipe from the March 2007 issue of Parents magazine. Tonight was the first time I tried this recipe. I think it was de-freaking-licious!

The boy's parents gave us a ton of meat, including some pork steaks.
Now, I don't know what pork steaks are. I know they're not the same as a pork chop or a pork loin.
