Light Chicken Pot PieThis recipe (from "The Best Light Recipes Cookbook") started out at 380 calaories and 9g fat (instead of the usual 510 calories and 28 g of fat...) The changes I made did not alter the taste or texture at all... just brought the fat and calories even lower. Serves 8
It's delicious and satisfying.

This is an easy, awesome tasting Chicken Pot Pie.
Ingredients:
1.5 lbs cubed, cooked chicken
2 cans Cream Soup (Mix or match flavors)
1 can Mushrooms, drained (Optional)
1 cup frozen mixed vegetables
1 cup cubed potatoes (Optional, see below.)
1/2 small diced onion (Optional)
Salt and Pepper to taste
A few shakes of McCormick's Season All
A pinch of Garlic Powder
Parsley flakes to taste
2 packages pre-made, refrigerated Pie Dough
Preheat oven to 350 degrees.
{This is an easily personalized recipe - substitute or increase/decrease to whatever you want!

Chicken pot pie is a favorite of my husband. I have never made it before but was trying to find a recipe to rival his mother's. However, this one is a pretty good attempt at it.

Pot Pie In The Crock Recipe
Take 3-4 boneless skinless chick breast (depending on how much you want)
2-3 cans of cream of chicken soup (depending on how much you want)
1 cup of milk
4 med potatoes
1 bag or box of frozen peas and carrots
1 small onion diced
sage, oregano, basil, parsley, paprika, ground pepper
2 pkgs of Pillsbury crescent rolls
In crock add Chicken breast, soup, milk, potatoes, onion and all spices Cook on low for about 6hrs stir in bag of carrots and peas to crock cook for about 10min Transfer to pie plate or something similar. Unroll crescent rolls and place on top of pie You do not need to make it pretty either. Just cover the top with the dough.

My "The Traditional Pie Cook Book", I bought it at a garage sale about a year ago.
Today I tried out a recipe from it for the first time.

Last night I made this for dinner. I didn't get any pictures, it was gone so fast, and I had left my camera at a friend's house anyway. It's really really good, and it's adapted from an old Betty Crocker recipe:
1 roll and bake pie crust
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon thyme
1/2 cup chicken broth
1/2 cup light cream (20%) ( I actually used heavy whipping cream and it was fine)
2 cups cubed cooked chicken or turkey
1 can (1 pound) peas and carrots, drained, or 1 package (10 oz.) frozen peas and carrots, cooked and drained
handful (maybe 1/3 cup) cooked edamame
mashed potatoes (from 3 large potatoes)
Heat oven to 425
Melt butter in large saucepan over low heat.

The other night I had this incredible craving for Chicken and Dumplings. I don't know why, but there it was. So I finally bought some biscuits, planning to make the dish that I posted previously - Slow Cooker Chicken and Dumplings - and glanced down at the label on the refrigerated biscuits that I bought.

I made SPM's Chicken Pot Pie with Mashed Potato Top for dinner last night. Here's the original recipe:

I wouldn't necessarily call myself a cornbread or corn muffin fan, but there's days when I really think they would hit the spot. You know, the rainy days, the cold ones where you just want something warm and delicious to wash away the blues. This recipe looks just about perfect for that, and with fall coming, what better than a tasty, warm, delicious meal waiting at home for you?

Chicken Selects Premium Breast Strips from McDonald's (5 pieces) with creamy ranch sauce
830 calories
55 grams (g) fat (4.5 g trans fat)
48 g carbohydrates
The only thing "premium" about these strips is the caloric price you pay. Add a large fries and regular soda and this seemingly innocuous chicken meal tops out at 1,710 calories.
