I love me some mashed potatoes, especially on Thanksgiving. The problem is that this dish is usually overloaded with tons of butter and cream, which can be a big problem if you're trying to stay healthy. One way I make my mashed potatoes healthier is by using Yukon Gold or Yellow Finn potatoes instead of the old stand-by, Russet potatoes.

Hey guys,
The other day I was browsing the net and I came across a
wonderful recipe for the Deluxe Potatoes they sell over at Mcdonalds in France and Spain.
I'm telling you, these potatoes are SO DARN DELICIOUS, they taste like fried,
oven baked, spiced up, crispy in the outside, rather soft in the inside FULL OF FLAVOR potato wedges!

If anyone asked me what my favorite food was growing up, my answer was always the same thing:
Mashed potatoes.
Now that I'm a little older, my tastes have expanded, but I will still admit that there's nothing like Grandma's homemade mashed potatoes. But I'm also a potato fiend.

Potato Lasagna
From Vegetarian Times magazine
4 lb. large Yukon gold potatoes (about 8 or 9 potatoes), peeled and cut into 1/4-inch-thick slices
1/4 cup olive oil
1/4 cup pesto
1 lb. low-fat ricotta cheese
1/2 cup Parmesan cheese
1 large egg plus 3 egg whites
Salt to taste

Try this delicious basil-stuffed chicken! The basil filling is like a mock pesto, using water instead of oil for fewer calories.
Serves: 4; Prep Time: 10 mins.; Cook Time: 45 mins.

Okay, we have some serious Mashed Potato eaters at my house (including me), so we make a ton of potatoes when we are gonna mash them! This is what me make if there's gonna be 3 or 4 of us .
Peel 10 medium potatoes and slice or cube into equal pieces.

Mmmmm potatoes and cheese, the combination is mouth-watering!
I love cheese, don't we all? I have been experimenting alot with Gruyere cheese, it's so yummy!

Here's the pics (below the recipe) - my flash is messed up on my camera so they look pretty crappy but oh well.. Ignore my ugly stove too, please. It's about 20 years old, came with the house, and I hope we can replace it this year.

I just made this tonight. It's fabulous and pretty easy. Basically you stuff the mashed potatos under the skin of the chicken breast and cook.
