I was a latecomer to the wonderful world of grilled cheese. When I was younger, I didn't eat much cheese, due to apparent insanity, and when I got a little older, I honestly thought that you couldn't make grilled cheese without using American cheese.
Sooooo not a fan of American cheese.

Calzone Dough
1 package ( 1/4 oz.) yeast
2 T. sugar
1 C. lukewarm water, about 110°F.

What you need:
100% whole wheat wraps
provolone cheese
chicken (grilled, lightly seasoned with seasoned salt)
strawberries
sliced almonds
raw spinach
Lay the wrap flat, and add provolone slice (or two, depending on wrap size), slivered almonds, spinach, strawberries, and grilled chicken. Roll wrap and cut in half. PERFECT for a summer picnic or light dinner.

Mini Philly Cheese Steak Crostini

1 1/2 pounds flank steak
2 tablespoons grill seasoning
Salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, divided plus some for drizzling
2 large yellow onions, finely chopped
2 large red bell peppers, finely chopped
1 cup beef stock
2 crusty French baguette, sliced on an angle about 1/2-inch thick
2 cups shredded provolone cheese
Preheat a grill pan or an outdoor grill to medium-high heat and preheat oven to 400°F. Season the steak on both sides with salt, freshly ground pepper and grill seasoning. Drizzle with olive oil and brush to coat in the oil.Transfer the steak to the grill and cook on each side for about 5-6 minutes for medium rare.

For our office White Elephant gift exchange back at Christmas, my friend Lisa got this Cuisinart Sandwich Maker.
And it's been sitting under her desk for five months now. So today, I convinced her to go to Whole Foods with me so that we could pick up some food and make some sandwiches.

I had a salad with greens and carrots, with some fresh Parmesan cheese and ranch dressing/pepper.
And a grilled cheese sandwich with provolone.
And some Pepsi!

If you're not from Pittsburgh, you're going to think it sounds gross. But trust me, if you try it, you'll probably like it. It's Pittsburgh's famous Primanti Brothers sandwich.

Mac And Cheese with Buffalo Chicken
Chicken
2 1/4 cups all purpose flour
1 1/2 tablespoons cayenne pepper
1 1/2 tablespoons paprika
1 1/2 tablespoons salt
1 1/2 tablespoons ground cumin
1 1/2 tablespoons ground coriander
2 cups whole milk
3 large eggs, beaten to blend
4 cups cornflakes, ground to crumbs in processor
1 pound chicken cutlets, cut crosswise into 1-inch-wide strips
Canola oil (for deep-frying)
Macaroni
1 pound small elbow macaroni
2 cups chopped green onions (about 8 large)
2 tablespoons chopped fresh oregano
8 tablespoons (1 stick) butter, divided
3 cups chopped onions
2 large garlic cloves, chopped
1/2 cup all purpose flour
4 cups whole milk
1 pound extra-sharp cheddar cheese, coarsely grated (about 4 cups packed)
8 ounces provolone cheese, coarsely grated (about 2 cups packed)
2 teaspoons paprika
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 cup hot pepper sauce (preferably Frank's RedHot Original)
Preparation
For chicken:
Whisk first 6 ingredients in deep medium bowl to blend. Place milk in second bowl, eggs in third bowl, and ground cornflakes in fourth bowl. Working with 4 chicken strips at a time, place in flour mixture and toss to coat.

Hi all. I pretty much do this every few months...I get all gung-ho, blog about my dieting, my exercise, then i don't blog for a while because I am not dieting anymore. Part of my problem is binge eating...there I said it.

Here, submitted for your approval, are several different calzone recipes. They contain various ingredients, have different methods, and several methods of preparation. The great thing about this dish is that you can experiment with it!
