This is one of those meals that I go to on those nights where I haven't prepared anything for dinner, but I want something fast and easy. It's a great meal that comes together quickly and, even better, it's something that you can personalize and really tailor to the likes and dislikes of your family. So, really, it can be as expensive or inexpensive as you'd like to make it!

Grilled Quesadillas

1 cup shredded cooked chicken*
1 cup grilled steak, sliced into 1/2 inch cubes*
1 cup roasted red peppers
1 cup chopped tomatoes
1 cup chopped black olives
1 cup chopped green onions
1/4 cup chopped cilantro
1 cup Monterey Jack cheese, grated
1 cup pepper jack cheese, grated
14 tortillas
for toppings
salsa
sour cream
guacamole
Mark each tortilla with guests initials.Using the fillings, assemble quesadillas to your liking.Preheat your grill to low heat.Place the quesadillas on the grill and cook until grill marks are present and the quesadilla turns golden brown, about 5-7 minutes. The inside should be warm and the cheese should be melted. Once finished cooking, remove the quesadilla from the grill, cut into 6 wedges, and serve with your favorite salsa, guacamole, and sour cream.
Makes 7 quesadillas.

The salsa does more than bring a spicy kick; along with the spinach and whole-wheat tortilla, it contributes fiber. The beans do, too -- and they also lend a protein boost.
Night before: Assemble the quesadillas, place in a portable container, and put in the fridge.

Cooking spray
2 cooked chicken breast halves
8 (6 to 8-inch) flour tortillas
1/2 cup chopped red onions
1/2 cup sliced mushrooms
1/2 cup sliced roasted red peppers (from water-packed jar)
1/2 cup sliced artichokes (from water-packed can or jar)
1/4 cup shredded Monterey jack or pepper jack cheese, for each quesadilla
Coat a large skillet or griddle with cooking spray. Set pan over medium heat to preheat.
Using a fork, pull chicken meat from bone in shreds.

Last night I needed a quick dinner because it was late and also something I could make with what I had on-hand, again because it was late and I wasn't budging from my apartment to grab some grub. This recipe was inspired from a quesadilla I had over the weekend that had feta it. I love feta (I'm greek, I kind of have to, ha), but was suprised by it being there.

This super-easy cheesy Mexican meal. This dinner will help you slim down south of the border--one serving of these black bean quesadillas has nine grams of belly-fat-fighting fiber.
Prep time: 10 minutes Cook time: 8 minutes
Ingredients:
4 fajita size flour tortillas
1 tsp jarred chopped garlic
1 c low-fat Mexican cheese blend
1 can (15 oz) no-salt-added or low-sodium black beans
1 can (15 oz) low-sodium diced tomatoes with green chilies 2 Tbsp ground cumin
Directions:
Preheat broiler.

Hello, I posted this in another group, too, but I wanted to share this. Not sure how original the idea of it is, but I LOVE this snack =)
Need:
- 4 corn tortillas
- 1/2 cup of fat-free cheddar cheese (I se Kraft)
- 1/2 cup of salsa
- 2 tbs of fat-free sour cream
- butter flavored coating spray
Basically I coat one side of each tortilla with the butter flavored spray. Then I mix the cheese and salsa together and add the mixture to the tortillas.
