Quinoa (pronounced KEEN-wah) is a relative newcomer to the American pantry. The tiny, ancient Peruvian seed, which has a mild, nutty flavor, is related to leafy green vegetables and is often used like a grain. Quinoa is as versatile as rice but it has a protein content that is superior to that of most grains, because it contains all the essential amino acids.

believe it was Quinoa that the celebrities were using as their “secret” to fitness. Well, hopefully we can look as good as them once we start eating like them!

I've been looking for healthier carb alternatives and so while reading My Super Foods book, I stumbled upon one called Quinoa. A small, round, yellow grain with a pleasant crunchy texture that cooks in just 12 minutes. A gluten free whole grain, rich in dietary fiber providing 45% daily value!!

I've discovered Quinoa flour! I was able to easily substitute 1/2 cup of the all purpose flour with Quinoa flour. This added a full 8 gms protein and only 4 gms of unsaturated fat.

I bought Quinoa this weekend because I finally found it. It is extremely expensive, imo. This is my first time making it so I thought I would take pics for you all.

Quinoa and Sweet Potato Salad - Serves 4
Original recipe from Veg Cooking.
Ingredients:
1 cup dry quinoa
2 cups vegetable stock
1 large sweet potato, diced
2 Tbsp. olive oil, divided
Black pepper and sea salt, to taste
Dash of cayenne pepper

I was given the honor of cooking Thanksgiving dinner for my family this year. It was only three of us so it wasn't a huge challenge, but still a fun project!
This meal is pretty similar to my Halloween Dinner, but the food was such a success I had to make it again.

I hope everyone had a nice holiday. I had the honor of cooking dinner for a small group of four people. The meal was vegetarian (actually vegan, except for one dessert), mostly organic, with no added sugar and nothing refined.

While most people were out either trick-or-treating or swiping some of their kid's candy, I decided to take the opposite route and make myself an impromptu healthy dinner.
What you see is:
- roasted vegetables
- mashed yams
- steamed asparagus and zucchini
- quinoa
As some of you may know, I am no chef, so all of this delicious food was really easy to make.
Roasted Vegetables
Zucchini, carrots, potatoes, onions, and sweet potatoes with olive oil, rosemary, thyme, sea salt and pepper, baked for about 20 minutes.

Tonight I experimented and made myself quinoa-stuffed red peppers. It was really easy and quite yummy.
I got the recipe from Shape.com (http://www.shape.com/davidkirsch) but modified it a bit to my liking.
