I had made these Oatmeal Raisin cookies for nurse's week the other day and everyone loved them! So of course, I thought I would share...

Oatmeal Raisin Cookies

Ingredients:
3/4 cup butter, softened (1 1/2 sticks) - [I only used 1/2 cup (1 stick)]
3/4 cup white sugar - [I only used 1/2 cup]
3/4 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon ground cinnamon - [I added a bit more for taste]
1/2 teaspoon salt
2 3/4 cups rolled oats
1 cup raisins - [I actually put in 1 1/2 cup]
I took the advice of some of the reviewers and added a dash of ground nutmeg, cloves, and ginger as well.

1/2 cup golden raisins
1 cup pitted naturally cured green olives (not pasteurized), such as Lucques, Picholine, or Castelvetrano, roughly chopped
1 tablespoon minced shallots
1/2 cup extra-virgin olive oil
2 tablespoons Moscato vinegar
1. Place raisins in a small bowl; add enough warm water to cover. Soak until plump and softened; drain.

The new TV movie version of Lorraine Hansberry's beautiful play A Raisin in the Sun was a success in the ratings last night, ultimately "winning" the night for ABC with an overall average of nearly 13 million viewers. This television adaptation of the play starred the same leads as the 2004 Broadway revival cast, including Sean Combs, Audra McDonald, and Phylicia Rashad. The latter two are Tony-winning Broadway regulars, but A Raisin in the Sun was hip-hop mogul Sean "P Diddy" Combs's Broadway debut.

This absolutely delicious recipe for classic Canadian butter tarts is based on the award-winning tarts served up at Wilkie's Bakery in my hometown of Orillia, Ontario. Enjoy!!
pie pastry (to fill 16 muffin cups; best with vegetable shortening rather than lard)
1/2 cup raisins (I like using dark Thompson raisins)
1/4 cup soft butter
1/4 cup packed brown sugar
1 pinch salt
1/2 cup corn syrup
1 egg, lightly beaten

INGREDIENTS
Angostura Dressing (Makes 2 cups)
3/4 cup (6 ounces) orange juice
1/2 cup (4 ounces) California raisin paste
1/2 cup (4 ounces) olive oil
Salt and fresh ground black pepper
1 teaspoon English mustard powder
1 tablespoon Angostura Bitters
1/4 cup (2 ounces) fresh lemon juice
1/4 cup balsamic vinaigrette
Salad
1 boneless skinless chicken breast, about 7 ounces
1 slice smoked ham
1 tablespoon California raisin juice concentrate
3 dried figs
1 tablespoon all-purpose flour
1 egg, beaten
2-2/3 tablespoons (1/2 ounce) dry bread crumbs
2-2/3 tablespoons (1/2 ounce) dry coconut flakes
Oil for frying
1 cup (2 ounces) assorted greens
3 tablespoons (1 ounce) California golden raisins
1 cucumber
10 chives
1 leaf radicchio
PROCEDURE
Measure all ingredients for dressing into blender container and blend well. Store in refrigerator until ready to serve. Preheat oven to 350°F.

1/4 cup pine nuts
1/4 cup raisins
Slivered zest and juice of 1 lemon
4 skinless salmon fillets (6 ounces each)
Coarse salt and ground pepper
1/4 cup chopped fresh parsley
3 tablespoons olive oil
5 ounces baby spinach (about 5 cups, loosely packed)
1. Preheat oven to 450°. Spread pine nuts on a rimmed baking sheet; toast in oven, tossing occasionally, until lightly golden, 5 to 7 minutes.

100 grs butter
100 grs sugar
100 grs flour
2-3 large cooking apples
1 tsp Cinnamon
1/2 cup raisins
Preheat the oven to 180ºC. Peel, core and chop the apples. Layer in a 2-3 inch baking dish the apple and sprinkle sugar and some cinnamon over the top.

1/2 c vegetable oil
1/3 c water
1 tsp vanilla
1 3/4 c all-purpose flour
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1 tsp baking soda
1/2 tsp salt
1 c cold mashed sweet potatoes
1/2 c raisins
1/2 c chopped nuts (I like pecans in this)
Preheat oven to 350°. Grease two loaf pans.
