1 bag (12 oz) white vanilla baking chips (2 cups)
1 cup Cascadian Farm® organic frozen raspberries (from 10-oz bag), thawed
1 container (1 lb) lemon creamy ready-to-spread frosting
1 package (8 oz) cream cheese, softened
1 teaspoon lemon extract
1 container (8 oz) frozen whipped topping, thawed
1 teaspoon vegetable oil, if desired
1 . Heat oven to 350°F. Grease 13x9-inch pan with shortening.

The best part of spring and summer, in my opinion, is the array of berries. I just can't seem to get enough during the season. Even though they are available year round, they just don't taste the same.

Chocolate almond crust with almond cream baked in, topped with pudding cream and ripe raspberries. Delish!
I saw some beautiful raspberries at the store and just had to try them with something.

1 teaspoon rubbed sage
1/2 teaspoon dried oregano
8 skinless, boneless chicken breast halves
1/4 cup fat-free chicken broth

1/2 teaspoon honey mustard
1 teaspoon chopped fresh rosemary leaves

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).

I love black and white clothing and normally I would tend to wear black, silver and diamonds with this to keep it very clean. But, I'm in a kicky kind of mood so, I thought it would be fun to add a bit of bright pink to the mix!

Lemon Truffle Parfaits
From Suite 101
Make this dessert ahead of time and store it, well covered, in the fridge. When you're ready to serve, top with the mint leaves and a dollop of whipped cream and serve with long iced tea spoons.
1/2 cup whipping cream + some for topping
1/2 cup white chocolate chips
1 cup lemon curd (make your own or buy it store bought)
6 sugar cookies
1 cup fresh raspberries
4 mint sprigs
In small heavy saucepan, combine 1/2 cup whipping cream with the white chocolate chips.

Makes 4 servings
Prep Time: 25 min
Cook Time: 5 min
Ingredients
1/2 pound (2 cups) mix of fresh blueberries, sliced strawberries, raspberries or blackberries
2 tablespoon powdered sugar
1/3 cup fat free sweetened condensed milk
1 container (6 ounces) lowfat vanilla yogurt
1 small loaf (10 ounces) French bread
1 egg
1 egg white
1/3 cup lowfat milk
1 teaspoon granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
non-stick cooking spray
Place berries in a small bowl and sprinkle with powdered sugar. For the sauce, spoon about 1/4 of the berries, sweetened condensed milk and yogurt into a blender (or food processor) and puree until smooth; set aside.
Cut bread into twelve 1 1/2-inch pieces.
