Green Beans with Caramelized Red Onions
From Good Housekeeping Magazine November 2006
Salt and ground black pepper
3 pounds green beans, trimmed
1 1/2 pounds red onions (about 3 medium), each cut in half, then sliced
3 tablespoons margarine or butter
1 tablespoon fresh thyme leaves, chopped
Directions
1. Fill large bowl with ice water to cool beans quickly after cooking; set aside. Heat 6- to 8-quart saucepot of salted water to boiling over high heat.

Tandoori turkey in the oven
For a few years now I've wanted to try to marry the traditional Southern Indian food my husband grew up enjoying with Thanksgiving as I know it (Southern girl with a love of spice and heat).
So this year I did a trial run of a tandoori-style turkey made in the oven. By next year I hope to build my own tandoor, or at least grill this guy, because it needs a little more heat to crisp up properly.

Okay, so the name is a little misleading, but I had this dish for dinner last night and I thought it was pretty tasty! The original recipe called for a little cream cheese, but #1 - I don't eat it and #2 - We have none in our house, so I just skipped that altogether. My husband said that it needed some sauce with it (I disagree), but he also said that just about anything would work - even some pasta sauce.

Ingredients
8 oz (225 g) chickpeas, soaked overnight
2 small red chillies, deseeded and finely chopped
½ oz or a 15 g pack fresh coriander
1 heaped teaspoon coriander seeds
1 heaped teaspoon cumin seeds
2 oz (50 g) butter
1 small onion, peeled and finely chopped
1 small green pepper, deseeded and finely chopped
3 large garlic cloves, peeled and finely chopped
1 level teaspoon turmeric
1 x 500 g tub Greek yoghurt
grated zest ½ lemon
1 dessertspoon lemon juice
salt and freshly milled black pepper
For the frying:
1 large egg, beaten
3 level tablespoons wholemeal flour or chickpea flour (gram flour)
2 tablespoons groundnut oil
For the red onion salad:
1 medium red onion, peeled and thinly sliced into half-moon shapes
1 level teaspoon grated lemon zest
juice 1 lemon
3 level tablespoons picked coriander leaves

First pour the soaked and drained chickpeas, together with enough fresh water to cover them, into a saucepan, then bring them to the boil, cover with a lid and simmer for about 30 minutes or until they're absolutely tender. Then drain them thoroughly in a sieve.
Whilst the chickpeas are cooking prepare the red onion salad – mix the onion with the lemon zest, juice and coriander in a small bowl and set aside to marinate for at least 30 minutes.

You will need to cut squares of parchment paper a little bigger than your tortilla bread and roll or press the dough flat onto the oiled side of the paper. Then lightly oil the top side of the dough.

i saw this recipe in the august 2007 issue of cooking light and knew i absolutely had to bake it.
red onion-fontina sake focaccia
adapted from cooking light, august 2007
1 package dry yeast
dash of sugar
3/4 cup warm water
2.75 cups all-purpose flour, divided
4 teaspoons cornmeal, divided
1 teaspoon salt
1/2 cup warm sake
cooking spray
1.5 cups vertically sliced red onion
1/2 teaspoon sake
1/2 teaspoon olive oil
dash of pepper
1 teaspoon water
1 large egg white, lightly beaten
1.75 cups shredded fontina cheese
1 teaspoon fresh thyme
1) dissolve yeast in warm water for 5 minutes
2) combine 2.5 cups flour, 1 tablespoon cornmeal, and 1 teaspoon salt in large bowl. mix well with a whisk
3) stir 1/2 cup warm sake into yeast mixture.

The other night I roasted a bunch of vegetables to have with steak. Of course I always make enough for ten people and there is only my husband and I. I had a lot left over and I didn't want to waste it so I decided to make soup.

A couple weeks ago I went to lunch at a deli down the street from my work and had the most delicious Tomato Gorgonzola soup. I decided to try and make it myself. I scoured the internet for a recipe and ended up mixing several together to make this one.

Ingredients
Romaine lettuce
Chopped red onions
Chopped cucumbers
2 oz feta cheese
8 olives
Red wine vinegar
Oregano
Directions
Mix all ingredients together and sprinkle with red wine vinegar and oregano.
Done! So easy, healthy and tasty.

Ingredients
3 tsp olive oil 1 skinless, boneless chicken breasts cut into bite size pieces ½ large onions, quartered 1 Tbsp balsamic vinegar 3 tsp red wine vinegar 3 tsp dried oregano
Directions
In a large skillet, heat oil and sauté chicken pieces until no longer pink and juices run clear. Remove and put on plate. Peel onion layers apart and sauté in same skillet over low heat until translucent.
