A few people have posted really tasty, fun recipes using refried beans today. So, I thought I'd put up the chili bean dip that I use instead of refried beans in my famous 7 layer dip! It's also great served with pita bread or tortilla chips.

I am always looking for snacks that are tasty and easy and this recipe for Mexican Pinwheels from the American Diabetes Association is one that you can make ahead of time and bring for lunch at work:
Mexican Pinwheels
Serving Size: 1 tortilla roll, sliced into pinwheels
Total Servings: 1
Prep time: 15 minutes
Chilling time: 2 hours
Ingredients:
2 Tbsp canned fat-free refried beans
1 10-inch tortilla
2 Tbsp diced tomato
2 Tbsp drained cooked corn, cooled
1 Tbsp reduced-fat sharp cheddar (optional)
1/2 Tbsp finely chopped cilantro (optional)
2 Tbsp mashed avocado
1 Tbsp fat-free sour cream
2 Tbsp salsa
Directions:
Spread the refried beans on the tortilla. Sprinkle tomato, corn, and if desired, cheese and cilantro onto refried beans. Mix avocado, sour cream, and salsa.

This dip is really easy, and I often make it for parties because it's very popular
I don't really have exact measurements for anything. Just wing it!
INGREDIENTS:
2 cans refried beans
1 can black beans
1 packet taco seasoning
1 small container cream cheese
1 jar salsa (I use Tostito's brand medium salsa)
2 cups guacamole (storebought, make your own, or try my recipe here)
1 medium tomato, diced
3 scallions, chopped
2 cups shredded cheese (I just buy the taco mix from the dairy section)
2 jalapeno peppers
1/2 cup sliced black olives
PREPARATION:
Combine the refried beans, black beans, and taco seasoning together until well-mixed
In a large bowl or container (I usually use a 9x13 inch baking pan), spread the beans as easily as possible across the bottom.

Ingredients
1 pound lean ground beef
2 teaspoons chili powder
2 teaspoons cumin
Pinch of salt
1 small can refried beans or bean dip
1 big bag corn tortilla chips
1 bag of Monterey Jack or Mozzarella cheese, grated
1 green onion, chopped
2 tomatoes, chopped or salsa
1 can black olives, chopped
Brown the ground beef in a medium skillet. Drain. Add the chili powder, cumin and salt.

Since LaylaCams posted her yummy sounding chili recipe, I figured I'd post mine as well.
Actually, it's not MY recipe, it's just the one I use. The recipe was created by my ex-boyfriend (and still-friend) Brendan.

Layered Mexican Dip
2 cups DANNON® Plain Yogurt
2 tablespoons chopped fresh cilantro
1 16 oz. can refried beans
1 cup chunky salsa (mild or spicy)
1 cup sliced black olives
1 cup lowfat grated cheddar cheese
1 cup jalapeno peppers (optional)

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)
