Chef Todd English cookes up this healthy but creamy risotto. He uses fresh vegetables to enhance flavor and texture. And the low-cal, protein-heavy scallops add a smooth richness, booting out much of the butterfat that's traditionally stirred into this Italian favorite.

I am obsessed with butternut squash, and this recipe from Everyday Food magazine is one of my favorite ways to use the ingredient. Everyone I've made it for (including myself) loves it.
Butternut Squash Risotto
Makes 6 servings
1 small butternut squash (about 1 pound), trimmed and peeled
3/4 cup mild oil, preferably sunflower-seed oil
1/4 small onion, diced
Coarse salt
1 1/2 pounds (3 cups) Carnaroli or Vialone Nano rice
8 cups hot Vegetable Broth
1 cup freshly grated Parmigiano-Reggiano cheese
1 tablespoon unsalted butter
Aged balsamic vinegar, for drizzling

What do you get when you cut more than half the fat and calories from a classic dish? Try this healthy remake of an all-time favorite.
Serves 4
Ingredients:
28 oz chicken stock
1 tbsp vegetable oil
1/2 onion, finely chopped
1 cup arborio rice
1 cup white wine
Large pinch of saffron
1 tbsp butter
1/4 cup grated Parmigiano-Reggiano, plus shavings for garnish (optional)
Directions:
Bring stock to a low simmer in a medium pot.

This dish was inspired by my favorite appetizer, spinach and artichoke dip. Since it is based on bar food, it only seems right to season it with beer. The alcohol cooks off, and the remaining taste is slightly sweet, a perfect complement to the sharp cheese flavors.

All these rice posts made me think about risotto.
I love making it (and eating it). It's not as difficult as some think it is...the only challenge is that you have to stir it CONSTANTLY or else it'll stick to the bottom of the pot and burn.

This is a favorite around our place. Best when you can use fresh sun-ripened tomatoes with lots of flavor and nice red color. Requires lots of hands-on time, but definitely worth it.
