Ingredients:
2 teaspoons olive oil
1/2 diced orange bell pepper, ribs and seeds removed 1 thinly sliced scallion
1/2 cup frozen corn kernels
1/4 teaspoon ground cumin
Coarse salt Ground pepper
2 large eggs
2 large egg whites
1/4 cup shredded white cheddar (1 ounce)
1/4 cup fresh prepared salsa
1/2 pitted and diced avacado
2 warmed according to package instructions whole-wheat flour tortillas (6-inch)
Directions:
In a medium nonstick skillet, heat 1 teaspoon oil over medium.

Ingredients
1 whole wheat English muffin
2 mushrooms, sliced
2 green onions, finely chopped
4 tablespoons diced green or red bell pepper
1/2 cup egg substitute
1/4 teaspoon pepper
oregano or Italian seasoning, dash
4 teaspoons pizza sauce
1/2 cup shredded low-moisture, part-skim Mozzarella cheese
Preheat oven to 350 degrees Fahrenheit.
Split English muffin in half and toast; set aside.
Heat a small non-stick skillet over medium heat.

I have done some spontaneous trips in the past couple of years - I haven't thought alot of things through about them, like who I'm travelling with or where I'm going to stay or whether I have enough money to get through it. Makes it more fun, I always say - the suspense keeps me guessing, wanting more and the excitement of it being a risky business keeps adrenline at a constant high. It also gives me the freedom to come up with plans as I go along.

Another one of my random trips - this time to McLeod Ganj. I had just had possibly the most depressing 7 weeks of my life in the Delhi summer, and desperately needed a break. Two very close friends, Ronak and Dalia, were already in McLeod Ganj (Himachal, gotta love it!) and I just HAD to go!

Okay, I posted this last night because I was making my own dinner and bored by what was on NPR, but then I deleted it because no one responded, probably because we were all at home making dinner!
So what's for dinner tonight? Last night I did a veggie stir fry (squash, onions, green beans, and these little cherry peppers) with brown rice, and I added a scrambled egg.
I have all this squash in my fridge and I can't decide what to make tonight!
