Here is my chicken recipe . It's 'thai chicken massaman curry'. The curry is sometimes called Muslim curry because the origin is from the muslim communities in Thailand.

Ingredients
1 tbs. vegetable oil
1/2 an onion, chopped
1/2 tsp ginger paste
1/2 tsp garlic paste
1/2 tsp cumin powder
1/2 tsp coriander powder
1 tsp red chili powder (or more if you like it pungent)
salt to taste
a little bit of hot water (I usually boil some before cooking and add as needed from the kettle)
3 boneless, skinless chicken thighs, cubed
3 heaped tbs fat-free sour cream
2 tbs evaporated milk
1/2 tsp paprika
2 tbsp chopped fresh coriander leaves
Directions
Heat the oil in a medium non-stick pan. Gently fry the onion until brown.

I wish I could claim this recipe as my own, but no - I found it on the aptly-named blog Cumin & Coriander (cumicori.blogspot.com). But I made it last night and was really pleased at the flavor the cumin gave the burgers (I used about 1 teaspoon of cumin - the recipe calls for 2). Here is blogger Stefanie's recipe for homemade hamburgers with cumin:
This is what I end up making when I have ground beef in the freezer and don't feel like standing in front of the stove stirring anything saucy.

Ingredients
1 can Crab meat, rinsed
2 slices Pumpernickel Bread
4 Tbsp Mayonnaise
2 slices Avocado
1 Tbsp chopped Green Onion-
2 slices Colby or American Cheese
1 Tbsp Parsley, chopped
Directions
In a small bowl mix crab, mayonnaise, onion and parsley. Spread half the mixture evenly on each slice of pumpernickel bread, top with a slice of avocado and then cheese. Butter outsides of bread lightly and fry in pan until crispy on both sides and cheese has melted.

Here's another Cuban dish I'd love to share with you all and LisaK ;)
It compliments a side of white rice along with any meat. Typically, black beans are made with a package of dry beans, boiled and soaked for an hour, sometimes you can use a ham bone for flavor, BUT most of us want something that’s quicker, so here’s my version.
Ingredients
Ingredients
1 can black beans
3 cloves of garlic, peeled and crushed (or use minced garlic)
A quarter of sweet onion, peeled and chopped
1 Half bell pepper, chopped
3-4 strips of bacon, chopped
3 teaspoons ground cumin
Small handful of chopped cilantro (cut off stems, and only use leaves)
Small handful of chopped parsley (cut off stems, and only use leaves)
1 teaspoon of Adobo powder (shown in picture)
salt and pepper to taste
In a medium sauce pan, add the chopped bacon bits and fry.

Salad
4 1/2 c water
3 c (2 10-ounce boxes) couscous
1 c dried currants
1 3-lb roasted chicken, skinned, boned and cut into bite sized pieces
1 1/2 c diced drained roasted red bell peppers (from jar)
1 15 1/2 oz can chick-peas (also called garbanzo beans), rinsed and drained
1 c chopped pitted Kalamata olives
1 bunch green onions, chopped
1/2 c chopped fresh cilantro
Orange Balsamic Dressing
3/4 c orange juice
3 Tbsp balsamic vinegar or red wine vinegar
3 Tbsp grated orange peel
1 Tbsp ground cumin
1/2 c olive oil
Salad
Bring 4 1/2 cups water to boil in large saucepan. Add couscous and currants. Cover, remove from heat and let stand 5 minutes.
