I love me some mashed potatoes, especially on Thanksgiving. The problem is that this dish is usually overloaded with tons of butter and cream, which can be a big problem if you're trying to stay healthy. One way I make my mashed potatoes healthier is by using Yukon Gold or Yellow Finn potatoes instead of the old stand-by, Russet potatoes.

I have been working on this recipe for turkey vegetable lasagna and I think I have finally perfected it. It takes a bit of time but its so worth it and makes a huge lasagna that will feed an army! Even my picky little brother liked this.

Cook Time: 3 min
Ingredients
1 cup fat free skim or 1% lowfat milk
2 packets instant oatmeal
1/2 ripe banana, mashed
1/2 tablespoon chopped walnuts
In a small bowl, combine milk and packets of oatmeal; Microwave on high for 1 to 2 minutes until steaming hot, but not boiling. Stir until creamy. Stir in mashed banana.

This handy "sandwich" in a muffin can be made in advance and stored in an airtight plastic bag in the freezer for up to two months. Simply pop a frozen Chicken Popover into a lunch bag in the morning, and it will be thawed by noon.
