Well, I've already asked you all about what type of meals you prefer to see recipes for and the results were very conclusive! But, as I scour the internet and cookbooks for recipes, I've also realized (belatedly) that what I like for food may not necessarily be what everyone else would enjoy.
I mean, most people think I'm weird for not liking cream cheese, and I think my husband is borderline insane for not loving potatoes.

Slow cookers are a fabulous tool for busy parents, busy spouses, and just plain busy people. It's hard to find time to cook a delicious and healthy meal where you're rushing off to work, picking up the kids from their multitude of activities, or just trying to unwind after a hard day.

This article comes from Woman's Day Magazine and I thought it gave some pretty good advice.
Do spray the inside of the crock with a nonstick cooking spray before every recipe to prevent sticking and to make cleanup easier.
Do cut root vegetables into small cubes no larger than 1-inch squares to ensure they cook in about the same amount of time as the meat.

Sometimes, a traditional recipe for the slow cooker is just what you need. With fall coming and cold nights creeping upon us, there might be a night you just want to come home to some good old comfort food. And what better that a pot roast?

I hope you have all been enjoying the recipes that I've been posting. I absolutely love to cook, and while I love to cook food that is more "gourmet", so to say, the reality of my life is that I just don't have the time. I cook 3 or more times a week (utilizing leftovers!), and really feel that good food doesn't have to be complicated or take all day.

I've probably said this about a thousand times before and pretty much everyone who knows me is aware of this fact, but I feel the need to state it again:
I hate mayonnaise.
I hate the smell, the texture, the taste, absolutely everything about it. Usually people have to sneak it into my meals and not tell me just so I'll eat it.

I've had a hankerin' for some homemade apple butter, this being apple season and all, and I heard you could make it in a crockpot. I've been checking out a lot of recipes and I like the one below. I decided on this one from cooks.com because (1) it uses apples (some recipes call for applesauce); (2) it cooks for a good long, slow time; and (3) you add the sugar after you know exactly how much apple pulp you are going to have.

Five-Layer Vegetable Strata with Pesto
From Fresh from the Vegetarian Slow Cooker
1 1/2 cups slow cooker or one 15.5 ounce can cannellini or other white beans, drained and rinsed
1 cup vegetable stock
2 tablespons pesto
1 tablespoon olive oil
2 large Yukon Gold potatoes, peeled and thinly sliced
1 large yellow onion, cut in half an dhtinly sliced into half moons
Salt and Pepper
1 medium size red bell pepper, seeded and thinly sliced into rings
1 large zucchini, thinly sliced
1 large ripe tomato, thinly sliced
Directions
1. In a food processor or blender, process the beans, stock, and pesto together until well blended. Set aside.

One of my ultimate comfort food dishes is Chicken and Dumplings. I'm not sure what it is about this dish, but it just always seems to hit the spot. And, best of all, it can be cooked in the slow cooker!
