Spinach belongs to the same family as beets and chard. This broad, leafy vegetable is cooling and is jade green in color. It has the slight bitter taste of its sister, beet greens and the slightly salty flavor of chard.

There's nothing more comforting than a juicy meatloaf for dinner.
I love flavors that go well together, like ham and cheese, peanut butter and jelly, etc.
For savory dishes, feta and spinach is a delicious classic combination.

To compliment my post on the health benefits of spinach, I decided to also post my favorite spinach dip recipe. Although this recipe calls for only 1 avocado, I usually use 2: I process one in the blender with the other ingredients, and for texture, I chop the second avocado and add the chunks just before serving. Quite tasty!

I've been considering making a lasagna for awhile now, but I just hadn't had the time. I've got all the ingredients, but the will to make it just wasn't there. But today, I finally got one of those days where I accomplished a multitude of things around the house, a lasagna included.
