Yesterday, I had a crummy, stressful day at work. It was one of those days when the higher-ups are freaking out about an impossible deadline at the end of the week, getting everyone else all stirred up and anxious, only to find out later that the deadline is actually two weeks away. It was frustrating and tiring.

Once upon a time in the middle of winter, when the flakes of snow were falling like feathers from the sky, a queen sat at a window sewing, and the frame of the window was made of black ebony. And whilst she was sewing and looking out of the window at the snow, she pricked her finger with the needle, and three drops of blood fell upon the snow. And the red looked pretty upon the white snow, and she thought to herself, would that I had a child as white as snow, as red as blood, and as black as the wood of the window-frame.

I just finished an absolutely delicious frozen entree of black bean and tofu enchiladas, so I went looking for a recipe! And the nice thing about this dish is that it's stocked with plenty of veggies and proteins - delicious! I'm not necessarily one for tofu, but I couldn't even taste it in my frozen entree thanks to the spicy enchilada sauce.

Take iron-rich lean beef to another level by topping this steak with cantaloupe, one of the best sources of vitamin A, a nutrient that keeps your skin and eyes at their healthiest.
Ingredients:
1 large cantaloupe, peeled, seeded and diced
1 medium red onion, diced
1 cup Italian parsley, chopped
1/2 cup fresh mint, chopped 2 tbsp white balsamic (or cider) vinegar
2 tbsp extra-virgin olive oil
3 lb flank steaks
2 tsp sea salt
1/2 tsp freshly ground black pepper
Directions:
Toss cantaloupe, onion, parsley, mint, vinegar and oil in a bowl. Set aside.

I just wanted to share this OUTSTANDING Chocolate Cake recipe I used to make my awesome Halloween Cake with!
I decorated it with a luxurious chocolate frosting all over, sprinkled with some coconut (dyed in 2 drops of food coloring), along with 2 "maizena" cookies dipped in the chocolate frosting for the cake as tomb stones with mini chocolate kisses aligned around the graves, sprinkled with crushed chocolate crackers as the dirt and a cone shaped chocolate glued by the icing on a chocolate frosted maria biscuit as a witches hat!
I swear, I don't think I've ever tasted a cake so chocolatey as this one, so creamy, so pure...!

BABY BACK RIBS :
2 racks baby back ribs (about 2 1/2 pounds)
1 recipe Bourbon Barbecue Sauce, recipe follows
Preheat oven to 350 degrees F.
Cut the racks of ribs in half crosswise. Rub the ribs, paying special attention to the meaty side, with 1/2 cup of the sauce.
