Recently, I praised butternut squash for its mild sweetness and versatility — but I was surprised when so many of you said you'd never prepared one before, or find it hard to work with. Since it'd be a bummer to miss out on this Fall vegetable at home (unless you can afford $400 for an automated butternut squash peeler!), I thought I'd help you out with instructions on how to prep it yourself. Here's a step-by-step lesson.

well, all things autumn save for the clothing. i am at a complete loss when it comes to dressing for cooler weather-- and i'm afraid to imagine what will happen come wintertime.

Thanksgiving is one of my favorite holidays because I love all the warm, savory dishes. This one has been in my family for years and it's sweet, creamy, and has a crunchy topping that reminds me of homemade mac and cheese. It's easy to prepare ahead of time, and is a great alternative to mashed potatoes or stuffing.

to cook the squash:
in a large pot (or dutch oven), cover whole squash with cold water. bring to a boil on high heat over the stove, then lower heat, cover, and allow to boil for about 30 minutes. remove squash from water and carefully cut in half lengthwise (squash will be hot!

Thanks to my boyfriend's grandparents who all summer have given me the largest squashes I ever I seen, I was able to try making a stuffed squash. I am used to the ones you buy at the store, a couple quick chops, a little saute and viola but it would have been a shame to saute these beauties!
Basically cut the top off the squash while it is lying down and scrap out the innards of the squash much like a pumpkin.

I am obsessed with butternut squash, and this recipe from Everyday Food magazine is one of my favorite ways to use the ingredient. Everyone I've made it for (including myself) loves it.
Butternut Squash Risotto
Makes 6 servings
1 small butternut squash (about 1 pound), trimmed and peeled
3/4 cup mild oil, preferably sunflower-seed oil
1/4 small onion, diced
Coarse salt
1 1/2 pounds (3 cups) Carnaroli or Vialone Nano rice
8 cups hot Vegetable Broth
1 cup freshly grated Parmigiano-Reggiano cheese
1 tablespoon unsalted butter
Aged balsamic vinegar, for drizzling

Okay, so here is my nummy squash recipe that you can use any form of squash for, but for this post, use butternut squash :-)
Slice squash into 1/8" to 1/4" slices; for the larger part you may want to half and quarter the slices. I normally add onions also. fill pan with water until you have covered the squash, until you are about an inch from the top of the pan.

Honey Baked Squash
A superb side dish utilising a seasonal (Autumn) ingredient. Just as good as a starter!
Serves 4 – Preparation and cooking time: 55 minutes
Ingredients
2 Small Acorn squash halved widthways and deseeded
3 tbsp Butter
90ml/3fl.oz.

Yum.
My mom just made me the most wonderful salad, full of crunch and flavor! It's based in roasted butternut squash, rocket leafs, nigella seeds and a marvelious yogurt dressing.

This past Christmas, everyone was to bring a warm salad to contribute. Thanks to both YumSugar's recommendation and AlliJean's recipe, I made one of the best salads ever. Everyone at dinner absolutely loved it, it was rich and delicious but not heavy.
