Steak with Shallots and Lyonnaise Potatoes
From Food & Wine magazine
3 tablespoons extra-virgin olive oil
3 large Yukon Gold potatoes (1 1/4 pounds), peeled and sliced 1/4 inch thick
1 large Vidalia onion, halved lengthwise and very thinly sliced crosswise
Kosher salt and freshly ground pepper
2 tablespoons red wine vinegar
Four 7-ounce sirloin steaks (1 inch thick)
2 tablespoons unsalted butter
4 large shallots, very thinly sliced
1/2 cup dry red wine
2 tablespoons finely chopped flat-leaf parsley
In a very large nonstick skillet, heat 2 tablespoons of the olive oil until shimmering. Add the potatoes in a slightly overlapping layer and cook over moderately high heat, stirring occasionally, until golden and nearly cooked through, about 8 minutes.Add the onion, season with salt and pepper and cook, stirring occasionally, until tender, about 5 minutes longer. Add 1/2 tablespoon of the vinegar and gently toss to combine.

Grilled Steak on Arugula
Notes: You can slice the artichokes up to 1 hour before serving; if you can't find baby artichokes, omit them. Buy a block of parmesan cheese larger than needed (at least 4 oz.) so you can shave curls from it. Drizzle the steak with a Tuscan or other peppery olive oil.

Mini Philly Cheese Steak Crostini

1 1/2 pounds flank steak
2 tablespoons grill seasoning
Salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, divided plus some for drizzling
2 large yellow onions, finely chopped
2 large red bell peppers, finely chopped
1 cup beef stock
2 crusty French baguette, sliced on an angle about 1/2-inch thick
2 cups shredded provolone cheese
Preheat a grill pan or an outdoor grill to medium-high heat and preheat oven to 400°F. Season the steak on both sides with salt, freshly ground pepper and grill seasoning. Drizzle with olive oil and brush to coat in the oil.Transfer the steak to the grill and cook on each side for about 5-6 minutes for medium rare.

Take iron-rich lean beef to another level by topping this steak with cantaloupe, one of the best sources of vitamin A, a nutrient that keeps your skin and eyes at their healthiest.
Ingredients:
1 large cantaloupe, peeled, seeded and diced
1 medium red onion, diced
1 cup Italian parsley, chopped
1/2 cup fresh mint, chopped 2 tbsp white balsamic (or cider) vinegar
2 tbsp extra-virgin olive oil
3 lb flank steaks
2 tsp sea salt
1/2 tsp freshly ground black pepper
Directions:
Toss cantaloupe, onion, parsley, mint, vinegar and oil in a bowl. Set aside.

So I wanted to know how you ladies like to cook your steaks, those of you who like steaks. I like to season mine with a bit of Old Bay and some fresh-ground salt and pepper, then sear it on high heat on each side and then cook more slowly for a couple of minutes, just until it's super rare but not cold. What about you?

I flew down to San Diego on Friday night and after a quick shower and an outfit change we (my sister and five of her fabulous friends-all of us were in mini skirts) were off to dinner at Tower 23. The menu offered a make it yourself section where you could order a steak cut, steak dry rub, steak sauce, and 2 sides. Mei my sister's friend order the fillet with mashed potatoes and asparagus.
