This Spring I've been looking for healthy dinner ideas that are different, tasty, and healthy. I was delighted to find this recipe for spaghetti with summer squash and peppers. Granted, it's not the easiest to make (in terms of cutting and slicing all the veggies) but it's really filling, super tasty, and definitely worth putting your knife skills to work.

This is to go with the Teriyaki Chicken Burgers with Swiss and Grilled Pineapple. I briefly considered doing a pasta salad but who wants all those carbohydrates when you are out in the water? I tried to keep it on the light side.

Thanks to my boyfriend's grandparents who all summer have given me the largest squashes I ever I seen, I was able to try making a stuffed squash. I am used to the ones you buy at the store, a couple quick chops, a little saute and viola but it would have been a shame to saute these beauties!
Basically cut the top off the squash while it is lying down and scrap out the innards of the squash much like a pumpkin.

Rendell happily signed Act 119 into law, which made modest improvements to the miserable health and welfare "standards" permitted under existing dog law.

we all kno in the summer and spring we get bombarded with those pesky bugs that ruin everything, but here are a few plants that will get those pesky bugs to leave you and your plants alone.
basil : gets rid of flies and misquitos
borage : tomato worms
garlic : groundhogs
hyssop : cabbage moths
mint : ants, white cabbage moths
rosemary : bean beetles, cabbage moths, carrot flies
rue : jap beatles
sage : cabbage moths, carrot flies
summer savory : bean beetles
tansy : ants, flying insects, jap beetles, squash bugs, striped cucmber beetles
thyme : cabbage worms
wormwood : black flea beetles, carrot flies, white cabbage butterflies.

Summer is right around the corner and nothing says summer like grilling. This fuss-free veggie dish can be prepared ahead and kept at room temperature before being tossed with the greens. The recipe contains quite a high percentage of calories from fat because of the olive oil, but the total calorie count is pretty low.

You can use any vegetable combination in this dish, depending on what looks good.
Serves: 4 Prep Time: 15 minutes Cook Time: 15 minutes
Ingredients:
3 tablespoons extra-virgin olive oil
1 cup sliced red onion
¼ teaspoon salt
1 ½ cups small broccoli florets
1½ cups small cauliflower florets
1 tablespoon minced garlic, divided
1 ½ cups green beans, halved lengthwise
1 cup sugar snap or snow peas, ends trimmed &frac; medium red or orange bell pepper (or both), thinly sliced &frac; small yellow summer squash, sliced 8 ounces uncooked rainbow fusilli
2 scallions, minced
3 tablespoons minced flat-leaf parsley
3 tablespoons minced basil
2 tablespoons freshly grated Parmesan Freshly ground black pepper
2 to 3 tablespoons pine nuts, lightly toasted (optional)
Directions:
Bring a large pot of water to a boil. Meanwhile, heat oil in a large skillet.

Not long ago I had an apple problem. Wavering in the produce section of a Manhattan grocery store, I was unable to decide between an organic apple and a nonorganic apple (which was labeled conventional, since that sounds better than "sprayed with pesticides that might kill you"). It shouldn't have been a tough choice--who wants to eat pesticide residue?--but the organic apples had been grown in California.

These days all I've been having for dinner is a nice bowl of steaming soup!
I live down in the south hemisphere of the globe, so I am suffering with winter. :(
