Sun Dried Tomato Dip
Modified from Ina Garten
1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup fresh basil, torn into pieces
Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade.Add the basil and pulse twice. Serve at room temperature with crackers, croutons, pita crisps, or flatbread.
Makes 2 cups.

For all you Broccoli Rabe lovers this recipe is for you!
Serves: 6; Prep Time: 5 minutes; Cook Time: 20 minutes
Ingredients:
Nonfat vegetable cooking spray
8 ounces broccoli rabe, washed, trimmed, and cut into 1-inch pieces 1 medium garlic clove, minced or pressed through garlic press
11 egg whites
1 whole egg
1/8 teaspoon red pepper flakes
3 ounces oil-packed sun-dried tomatoes, drained and chopped coarse
1/4 cup fat-free milk (or water)
Salt Pepper
3 ounces freshly grated Parmigiano-Reggiano Directions
Directions:
Coat a medium nonstick oven-safe skillet with cooking spray.
Saute the broccoli rabe until tender.

SERVES 8
Ingredients
2 tablespoons plus 2 teaspoons olive oil
1 1/2 tablespoons all-purpose (plain) flour
2 garlic cloves, minced
1 cup plain soy milk (soya milk)
1 cup vegetable stock
2 green (spring) onions, including tender green tops, sliced
1/2 cup dry-packed sun-dried tomatoes, soaked in water to rehydrate, drained and chopped
10 ounces fresh cremini or shiitake mushrooms, sliced
1 shallot, minced
tablespoon chopped fresh flat-leaf (Italian) parsley
1/4 teaspoon salt
6 cups baby spinach leaves, chopped
2 cups fat-free ricotta cheese
3/4 cup grated Parmesan cheese
1 egg white
12 no-boil spinach lasagna sheets, about 7 by 3 1/2 inches
1 tablespoon chopped fresh basil
Directions
In a saucepan, heat the 2 tablespoons olive oil over medium-high heat. Whisk in the flour and cook for 1 to 2 minutes, stirring constantly. Add the garlic and continue to whisk until the garlic is fragrant, about 30 seconds.

I improvised this tortellini with sun-dried tomato pesto recipe when the boyfriend and I had a dinner party. It was so easy but very well-received.

Today I’m participating in one of those staples of summertime: a Yard Sale. Which, pretty much means that I’m spending the entire morning outside with nothing to guard my skin other than a Boston Red Sox hat and the sunscreen that I slather on before I head out the door.
That's how they say it in Boston...:)
