INGREDIENTS
2 sweet potatoes, peeled and shredded
2 eggs, lightly beaten
1 tablespoon brown sugar
2 tablespoons all-purpose flour
2 teaspoons ground cloves
2 teaspoons ground cinnamon
1/4 cup vegetable oil for frying
DIRECTIONS
Place sweet potatoes in a colander. Place a cheesecloth over the potatoes, and squeeze the potatoes to release as much liquid as possible. Let the potatoes sit to release more liquid, then squeeze again.

My mother usually prepares some sort of potato dish for Christmas Day and while I love her sweet potatoes, I have a feeling that this dish could prove to be a hit too. And less work for her - just throw it in the crockpot and enjoy the day!
This could be a great side dish and a new way to serve your sweet pototoes.

Try this simple fish dish with less than 500 calories.
Ingredients:
2 large sweet potatoes, cut into 1/2" chunks
1 Tbsp olive oil
4 sea bass fillets, 5-6 oz each (any type except Chilean)
4 scallions, sliced in half lengthwise
6 Tbsp sake
2 Tbsp low-sodium soy sauce
1 tsp grated ginger
2 Tbsp garlic-infused olive oil (if not available, warm a garlic clove in regular olive oil over medium heat, then remove clove)
18 tsp crushed chili flakes
12 c fresh spinach
Lime juice
Directions:
Preheat oven to 400F. Place potatoes in roasting pan and coat with olive oil.

Quinoa and Sweet Potato Salad - Serves 4

Ingredients:
1 cup dry quinoa
2 cups vegetable stock
1 large sweet potato, diced
2 Tbsp. olive oil, divided
Black pepper and sea salt, to taste
Dash of cayenne pepper

Low Fat Crockpot Sweet Potatoes
3 lbs sweet potatoes, peeled and cut into 1 inch cubes
1 1/2 inches fresh ginger, peeled and minced
1 large onion, diced
1 stalk lemongrass, outer leaves removed, and split lengthwise
1 Tbs sesame oil
1 1/2 tsp tamarind paste
1/4 cup rice wine vinegar
1/4 cup light soy sauce
2 cups orange juice
1 finely grated lemon, zest of
1 pinch ground red pepper (to taste)
Place ingredients into crockpot. Cover and cook on high for 4 1/2-5 hours or until potatoes are nice and tender. Remove lemongrass pieces and discard.

This soup is very soothing for dinner during winter.
Its full of delicious combinations, sweet and creamy from the sweet potato and carrots and chickpeas to finish off the pleasurable taste and texture.
The spices just add in that touch of magic the soup needs for those innocent punchy flavors.

For Thanksgiving, instead of making sweet potato pie, I make it like a casserole...this way I can serve it with my dinner as a side & it makes room for one more dessert. You can do it as a dessert or a side, though! It is sweet!

I had the pleasure of cooking a package of Nuovo's Roasted Sweet Potato Gnocchi last night (I have also bought the basil and the original). I followed the cooking instructions and topped it with a alfredo sauce with a little bit of "Jane's Crazy Mixed-up Salt". Yum-O!!!!
