Yesterday, I had a crummy, stressful day at work. It was one of those days when the higher-ups are freaking out about an impossible deadline at the end of the week, getting everyone else all stirred up and anxious, only to find out later that the deadline is actually two weeks away. It was frustrating and tiring.

Cheesy Apple Pancakes

Prep Time: 10 min
Total Time: 22 min
Makes: 12 servings, 1 topped pancake each
2 cups complete pancake mix
1-1/2 cups milk
1 cup KRAFT Shredded Sharp Cheddar Cheese
1 medium apple, peeled, cored and shredded
Optional Ingredients
3 cups mixed fresh berries (strawberries, blueberries and raspberries)
1-1/2 cups maple-flavored or pancake syrup
Directions
BEAT pancake mix and milk in large bowl with wire whisk until well blended. Stir in cheese and apples.
LADLE batter into hot greased skillet, using 1/3 cup batter for each pancake.

2oz of Torani sugar free vanilla syrup
8 oz sparkling water or club soda
Add to a highball glass and stir...enjoy!

For The Syrup:
1/3 cup pure maple syrup
1/4 cup whole berry cranberry sauce
For The Pancakes:
1/2 cup quick-cooking or old-fashioned oats
1/2 cup all-purpose flour
2 Tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 pinch ground nutmeg
1 cup + 2 Tablespoons buttermilk (regular milk will work)
2 large eggs
2 and 1/2 Tablespoons vegetable or canola oil
Prepare the syrup by heating both ingredients together in a small saucepan over medium heat. Stir until cranberry sauce is incorporated. Reduce heat to low to keep warm.

A nice glass of chocolate milk always hits the spot. Just mix together some milk and your favorite chocolate syrup. Which one to choose ?

I love copy cat recipes, and even more I love Applebee's Blondie recipe -so I found this great recipe for it here
Ingredients:
1 cup sifted flour
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chopped walnuts
1/3 cup butter or margarine
1 cup packed brown sugar
1 egg -- beaten
1 tablespoon vanilla extract
1/2 cup white chocolate chips
***Maple butter sauce: ***
3/4 cup maple syrup
1/2 cup butter
3/4 cup brown sugar
1/2 cup walnuts, chopped (optional)
Directions:
Preheat oven to 350º.
Sift flour, add baking powder, baking soda, and salt. Sift again.
